Description

These Lunch Lady Brownies are rich, fudgy, and chewy with a smooth cocoa frosting that melts into the warm brownies. They deliver a nostalgic school cafeteria-style chocolate dessert flavor with every bite.

Ingredients

1 cup melted butter

1/2 cup unsweetened cocoa powder

2 cups all-purpose flour

2 cups sugar

1/2 teaspoon salt

4 eggs

3 tablespoons vanilla extract

1/4 cup melted butter

1/4 cup milk

3 cups powdered sugar

1/4 cup unsweetened cocoa powder

1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9x13-inch baking pan.
  2. In a large bowl, whisk together 1 cup melted butter and 1/2 cup cocoa powder until smooth.
  3. Add the flour, sugar, salt, eggs, and 3 tablespoons vanilla extract. Mix until fully combined and thick.
  4. Spread the brownie batter evenly into the prepared pan.
  5. Bake for 25 to 30 minutes, until the center is set and a toothpick inserted comes out with moist crumbs.
  6. While the brownies bake, prepare the frosting by whisking together 1/4 cup melted butter, milk, powdered sugar, 1/4 cup cocoa powder, and 1 tablespoon vanilla extract until smooth.
  7. Spread the frosting over the warm brownies and allow them to cool before slicing and serving.

Notes

Add chopped walnuts or pecans for extra crunch.

A pinch of espresso powder can deepen the chocolate flavor.

Sprinkle mini chocolate chips over the warm frosting for a sweeter finish.

Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.

Freeze sliced brownies in an airtight container for up to 2 months.

Warm individual brownies in the microwave for a few seconds for an extra fudgy texture.
