Description

Mango Sago Dessert Pudding is a creamy, refreshing tropical dessert made with sweet mango purée, chewy tapioca pearls, coconut milk, and juicy mango pieces. Served chilled, it is an easy no-bake treat that's perfect for warm days and special gatherings.


Ingredients

1/2 cup small tapioca pearls

3 ripe mangoes, peeled and chopped

1 cup coconut milk

1/2 cup evaporated milk

1/4 cup sweetened condensed milk

1/2 cup mango cubes

1/2 cup nata de coco or mango jelly

2 cups water

Ice cubes, for serving


Instructions

  1. Bring 2 cups of water to a boil in a medium saucepan.
  2. Add the tapioca pearls and cook for 10 to 15 minutes, stirring occasionally, until mostly translucent.
  3. Turn off the heat, cover the saucepan, and let the pearls rest for 10 minutes.
  4. Rinse the cooked tapioca pearls under cold water and drain thoroughly.
  5. Blend 2 chopped mangoes until smooth.
  6. In a large bowl, combine the mango purée, coconut milk, evaporated milk, and sweetened condensed milk. Stir until smooth.
  7. Fold in the cooked tapioca pearls, mango cubes, nata de coco or mango jelly, and the remaining chopped mango.
  8. Cover and refrigerate for at least 1 hour.
  9. Serve chilled with ice cubes if desired.

Notes

Use ripe, fragrant mangoes for the sweetest flavor.

Adjust the sweetness by adding more or less sweetened condensed milk.

For a thinner consistency, stir in extra coconut milk or evaporated milk before serving.

Store covered in the refrigerator for up to 2 days.

Stir in a splash of coconut milk if the tapioca pearls absorb too much liquid during storage.

Do not freeze, as it changes the texture of the pudding and tapioca pearls.
