Description
Mango Sago Dessert Pudding is a creamy, refreshing tropical dessert made with sweet mango purée, chewy tapioca pearls, coconut milk, and juicy mango pieces. Served chilled, it is an easy no-bake treat that's perfect for warm days and special gatherings.
Ingredients
1/2 cup small tapioca pearls
3 ripe mangoes, peeled and chopped
1 cup coconut milk
1/2 cup evaporated milk
1/4 cup sweetened condensed milk
1/2 cup mango cubes
1/2 cup nata de coco or mango jelly
2 cups water
Ice cubes, for serving
Instructions
- Bring 2 cups of water to a boil in a medium saucepan.
- Add the tapioca pearls and cook for 10 to 15 minutes, stirring occasionally, until mostly translucent.
- Turn off the heat, cover the saucepan, and let the pearls rest for 10 minutes.
- Rinse the cooked tapioca pearls under cold water and drain thoroughly.
- Blend 2 chopped mangoes until smooth.
- In a large bowl, combine the mango purée, coconut milk, evaporated milk, and sweetened condensed milk. Stir until smooth.
- Fold in the cooked tapioca pearls, mango cubes, nata de coco or mango jelly, and the remaining chopped mango.
- Cover and refrigerate for at least 1 hour.
- Serve chilled with ice cubes if desired.
Notes
Use ripe, fragrant mangoes for the sweetest flavor.
Adjust the sweetness by adding more or less sweetened condensed milk.
For a thinner consistency, stir in extra coconut milk or evaporated milk before serving.
Store covered in the refrigerator for up to 2 days.
Stir in a splash of coconut milk if the tapioca pearls absorb too much liquid during storage.
Do not freeze, as it changes the texture of the pudding and tapioca pearls.
