Description

This Marinated Raw Zucchini Salad features tender zucchini ribbons tossed in a zesty lemon garlic marinade and topped with crunchy pine nuts and creamy feta cheese. A refreshing Mediterranean-inspired side dish that's easy to prepare and perfect for summer meals.

Ingredients

1 garlic clove, minced

Zest of 1 lemon

Juice of 1 lemon

½ teaspoon salt

1 teaspoon Italian herbs

2 tablespoons extra virgin olive oil

4 medium zucchini

3 tablespoons pine nuts

¼ cup crumbled feta cheese

Instructions

  1. Prepare the marinade: In a large mixing bowl, combine the minced garlic, lemon zest, lemon juice, salt, Italian herbs, and extra virgin olive oil. Whisk until well combined.
  2. Prepare the zucchini: Wash the zucchini thoroughly and trim both ends. Using a Y-shaped vegetable peeler, shave each zucchini lengthwise into thin ribbons. Discard the first dark green outer strips and rotate the zucchini when you reach the seedy center to continue making ribbons.
  3. Marinate the zucchini: Add the zucchini ribbons to the bowl of lemon garlic marinade. Gently toss with clean hands or kitchen tongs until evenly coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  4. Remove excess moisture: Transfer the marinated zucchini ribbons to clean kitchen paper and gently pat dry to remove excess liquid. This prevents the finished salad from becoming watery.
  5. Assemble the salad: Arrange the zucchini ribbons on a serving platter in loose folds. Sprinkle evenly with pine nuts and crumbled feta cheese.
  6. Serve immediately: Enjoy the salad cold or lightly chilled while the zucchini is tender, the pine nuts are crunchy, and the feta is fresh and creamy.

Notes

Choose fresh, firm, medium zucchini for tender ribbons and fewer large seeds.

For extra flavor, lightly toast the pine nuts before adding them to the salad.

Marinate the zucchini for at least 30 minutes. For a stronger flavor, refrigerate for 2–4 hours, keeping in mind that the ribbons will soften over time.

For a dairy-free version, omit the feta cheese or replace it with a plant-based feta alternative.

Add halved cherry tomatoes for extra sweetness, color, and freshness.

Substitute pine nuts with toasted sliced almonds, chopped walnuts, or pistachios.

Add fresh basil, parsley, dill, or mint for additional Mediterranean flavor.

For a spicy variation, add a pinch of crushed red pepper flakes to the marinade.

To make the salad more filling, add cooked chickpeas, quinoa, or white beans.

For meal preparation, keep the pine nuts and feta separate until just before serving to preserve their texture.

Store leftovers in an airtight container in the refrigerator for up to 2 days. The zucchini will become softer and release additional moisture over time.

Freezing is not recommended because raw zucchini becomes mushy after thawing.

Serve cold or lightly chilled. If refrigerated for several hours, let the salad sit at room temperature for 5–10 minutes before serving.

Serve alongside grilled chicken, baked fish, roasted vegetables, hummus, pita bread, couscous, or quinoa.
