Description

This meatloaf with mushroom gravy is a comforting and hearty dish featuring a juicy meatloaf topped with creamy, savory mushroom gravy. It's the perfect meal for a cozy family dinner.


Ingredients

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup milk

1 egg

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

1 cup mushrooms, sliced

2 tablespoons flour

2 cups beef broth

1/4 cup heavy cream

Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, oregano, salt, and pepper. Mix well until everything is fully incorporated.
  3. Shape the mixture into a loaf and place it on a lined baking sheet or in a loaf pan.
  4. Bake for 45-50 minutes or until cooked through, and the internal temperature reaches 160°F (71°C).
  5. While the meatloaf is baking, prepare the mushroom gravy. Heat olive oil in a skillet over medium heat.
  6. Add the sliced mushrooms and sauté for 5-7 minutes, or until the mushrooms are tender and browned.
  7. Stir in the flour and cook for 1-2 minutes to form a roux.
  8. Gradually add the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 5 minutes, or until it thickens.
  9. Stir in the heavy cream, then season with salt and pepper to taste. Simmer for another 2-3 minutes.
  10. Once the meatloaf is done, slice it and serve with the mushroom gravy poured on top.

Notes

For a lighter option, swap ground beef for ground turkey or chicken.

You can experiment with different mushrooms like shiitake or cremini for a unique flavor.

For extra herbs, adding thyme or rosemary to the meatloaf mixture gives it a nice twist.

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days.
