Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon olive oil
1 cup mushrooms, sliced
2 tablespoons flour
2 cups beef broth
1/4 cup heavy cream

Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, oregano, salt, and pepper. Mix well until everything is fully incorporated.
- Shape the mixture into a loaf and place it on a lined baking sheet or in a loaf pan.
- Bake for 45-50 minutes or until cooked through, and the internal temperature reaches 160°F (71°C).
- While the meatloaf is baking, prepare the mushroom gravy. Heat olive oil in a skillet over medium heat.
- Add the sliced mushrooms and sauté for 5-7 minutes, or until the mushrooms are tender and browned.
- Stir in the flour and cook for 1-2 minutes to form a roux.
- Gradually add the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 5 minutes, or until it thickens.
- Stir in the heavy cream, then season with salt and pepper to taste. Simmer for another 2-3 minutes.
- Once the meatloaf is done, slice it and serve with the mushroom gravy poured on top.
Notes
For a lighter option, swap ground beef for ground turkey or chicken.
You can experiment with different mushrooms like shiitake or cremini for a unique flavor.
For extra herbs, adding thyme or rosemary to the meatloaf mixture gives it a nice twist.
