Description

Rich, fudgy Monster Mash Brownies loaded with white and dark chocolate chips and topped with colorful buttercream monster faces. They are a playful Halloween dessert perfect for parties and family baking.


Ingredients

1/2 cup (75 g) all-purpose flour

3/4 cup (75 g) unsweetened cocoa powder

1 1/2 cups (300 g) granulated sugar

1 1/4 cups (300 g) unsalted butter, melted

1 1/2 cups (300 g) dark chocolate, melted

6 large eggs

1 cup (200 g) white chocolate chips

1 cup (200 g) dark chocolate chips

1 1/4 batches American buttercream frosting

1/4 cup (20 g) cocoa powder

2 tablespoons milk

Black food gel

Teal food gel

Yellow food gel

Red food gel

Purple food gel

Pink food gel

Liquorice pieces, about one 20 cm roll


Instructions

  1. Divide the American buttercream into several small bowls, leaving one portion white. Tint the remaining portions with the food gels to create the desired monster colors. Mix cocoa powder and milk into a portion as needed for chocolate-colored frosting.
  2. Preheat the oven to 175°C (340°F). Line a 32 x 24 cm baking pan with parchment paper and lightly grease it.
  3. Melt the unsalted butter and dark chocolate together, stirring until completely smooth. Set aside briefly to cool slightly.
  4. Whisk the granulated sugar into the melted chocolate mixture. Add the eggs one at a time, mixing well after each addition until smooth and glossy.
  5. Fold in the cocoa powder and all-purpose flour just until combined. Gently stir in the white and dark chocolate chips without overmixing.
  6. Spread the batter evenly in the prepared pan and bake for about 30 minutes. A toothpick inserted into the center should come out with moist crumbs rather than wet batter.
  7. Allow the brownies to cool completely at room temperature, then chill until firm enough to cut neatly.
  8. Lift the chilled brownie slab from the pan and cut it into 9 equal portions using a sharp knife or suitable cookie cutter.
  9. Transfer the colored frostings to piping bags fitted with assorted tips. Decorate each brownie with monster designs such as Frankenstein, mummies, spiders, Dracula, ghosts, zombies, or other creatures. Add small pieces of liquorice for facial features and other details.

Notes

Cool the brownies completely before decorating so the buttercream does not soften or melt.

Candy eyes can be used for quicker and easier monster faces.

Replace the white chocolate chips with dark or milk chocolate chips for an even richer chocolate flavor.

Use orange, neon green, purple, black, white, or other food colors to customize the Halloween designs.

For more servings, cut the brownies into smaller squares and use simpler decorations.

Store decorated brownies in an airtight container in the refrigerator, separating layers with parchment paper if needed.

For the best texture, bring refrigerated brownies to room temperature for 15–30 minutes before serving.

Avoid reheating decorated brownies because the buttercream may melt. Undecorated brownies can be warmed briefly before serving.

For longer storage, freeze completely cooled, undecorated brownies individually wrapped in a freezer-safe container. Thaw before decorating with fresh buttercream.

Zip-top bags with a corner snipped off can be used instead of piping bags.
