These No Bake Pecan Pie Balls are a quick, wholesome twist on the classic Southern dessert, combining toasted pecans, dates, and graham cracker crumbs into bite-sized treats without turning on the oven.
Ingredients
1 1/2 cups pecans (toasted for best flavor)
1 cup Medjool dates, pitted
1/2 cup graham cracker crumbs (or oat flour for GF)
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch of salt
2–3 tbsp maple syrup (or honey)
Optional: Melted dark or white chocolate for dipping/drizzling
Instructions
- Add pecans to a food processor and pulse until finely chopped.
- Add dates, graham cracker crumbs, vanilla, cinnamon, salt, and maple syrup. Process until the mixture holds when pressed.
- Roll the mixture into 1-inch balls using your hands.
- If desired, dip each ball into melted chocolate or drizzle chocolate over the top.
- Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to set.
Notes
Roll in crushed pecans or coconut flakes for extra texture.
Add a splash of bourbon or rum extract for a festive twist.
Use sunflower seeds for a nut-free version.
Try different chocolates for coating depending on your taste and occasion.
