Description

This No-Bake Pumpkin Pie Cheesecake combines a buttery graham cracker crust, a smooth cream cheese layer, warmly spiced pumpkin filling, and fluffy whipped topping. An easy, creamy fall dessert that's perfect for Thanksgiving, holiday gatherings, and make-ahead entertaining.

Ingredients

4 ounces cream cheese, softened

¼ cup white granulated sugar

8 ounces Cool Whip, divided in half

1 (10-inch) pre-made graham cracker crust

¼ cup instant vanilla pudding mix

½ cup milk

1 cup canned pumpkin puree

1 teaspoon pumpkin pie spice

½ teaspoon ground nutmeg

½ tablespoon ground cinnamon

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese, granulated sugar, and half of the Cool Whip (approximately 4 ounces). Beat with a hand mixer until smooth, creamy, and free of lumps.
  2. Spoon the cream cheese mixture into the pre-made graham cracker crust. Spread evenly across the bottom using a spatula, making sure the filling reaches the edges.
  3. In a separate bowl, whisk together the instant vanilla pudding mix and milk until the mixture begins to thicken.
  4. Add the canned pumpkin puree, pumpkin pie spice, ground nutmeg, and ground cinnamon to the thickened pudding mixture. Stir until smooth and evenly combined, scraping the sides and bottom of the bowl as needed.
  5. Carefully spoon the pumpkin filling over the cream cheese layer. Gently spread into an even layer without disturbing the filling underneath.
  6. Spread the remaining 4 ounces of Cool Whip evenly over the pumpkin layer. If desired, sprinkle with additional cinnamon or pumpkin pie spice for decoration.
  7. Refrigerate the cheesecake for at least 4 hours, or preferably overnight, until the layers are firm and thoroughly chilled.
  8. Once chilled, slice the cheesecake into 8 portions using a sharp knife. Wipe the blade between cuts for clean slices and serve cold.

Notes

Use full-fat cream cheese for a richer, smoother cheesecake layer. Allow it to soften before mixing to prevent lumps.

Use instant vanilla pudding mix rather than cook-and-serve pudding for the proper filling consistency.

Choose pure canned pumpkin puree, not pumpkin pie filling, which already contains sugar and spices.

For best results, refrigerate the cheesecake overnight to help the layers firm up and make slicing easier.

Substitute stabilized homemade whipped cream for Cool Whip if desired. Stabilized cream holds its shape better than regular whipped cream.

For a gingersnap variation, replace the graham cracker crust with a gingersnap cookie crust.

For a chocolate variation, use a chocolate cookie crust and drizzle chocolate sauce over the cheesecake before serving.

For a maple variation, add a small amount of maple extract to the cream cheese mixture.

For added crunch, sprinkle chopped toasted pecans over the whipped topping.

For a stronger spice flavor, add a little extra pumpkin pie spice to taste.

For individual servings, assemble the layers in small dessert cups with crushed graham crackers at the bottom.

Store leftover cheesecake covered tightly in the refrigerator at 40°F (4°C) or below for 3 to 4 days.

To freeze, chill until firm, then wrap tightly in plastic wrap and aluminum foil. Freeze for up to 1 to 2 months for best quality. Thaw overnight in the refrigerator before serving.

Do not reheat this cheesecake. Always serve chilled to preserve its creamy texture and distinct layers.

For clean slices, dip a sharp knife into warm water, wipe it dry, and clean the blade between cuts.
