One-Pot Smoked Sausage Pasta

Ingredients

12 oz smoked sausage (kielbasa or andouille), sliced into rounds

1 tablespoon olive oil or butter

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes (with juice)

3 cups chicken broth

8 oz pasta (penne, rotini, or shells work best)

½ teaspoon smoked paprika

½ teaspoon Italian seasoning

Salt & black pepper, to taste

½ cup heavy cream (or half-and-half for lighter)

1 cup shredded cheddar or mozzarella cheese

Fresh parsley, chopped (for garnish)

Directions

I heat olive oil in a large skillet or pot over medium heat. Then I add the sliced sausage and cook it until it’s browned—about 3 to 4 minutes. I remove it and set it aside.

In the same pot, I sauté the diced onion, garlic, and red bell pepper for another 3 to 4 minutes until everything is soft and fragrant.
