Ingredients

1 French baguette, sliced into 1/2-inch rounds

1 tablespoon olive oil

1 cup whole milk ricotta cheese

1 tablespoon honey (plus more for drizzling)

1/2 teaspoon lemon zest

23 ripe peaches, thinly sliced

1/4 cup fresh basil leaves, torn

Flaky sea salt, to taste

Freshly ground black pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Arrange baguette slices on a baking sheet and lightly brush each piece with olive oil.
  3. Toast the bread in the oven for 8–10 minutes until golden and crisp. Let cool.
  4. In a food processor or with a hand mixer, whip ricotta, honey, and lemon zest until smooth and fluffy (about 1–2 minutes).
  5. Spread a generous spoonful of whipped ricotta on each toasted baguette slice.
  6. Top each with thin peach slices and torn basil leaves.
  7. Drizzle with a touch of honey and finish with flaky sea salt and freshly ground black pepper just before serving.
