Peach Pie Bars combine the flavors of a traditional peach pie in a convenient bar form. A buttery crust, sweet peach filling, and a crisp topping make these bars a perfect summer treat.
Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
2 cups fresh peaches, peeled and chopped

1/4 cup light brown sugar

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- For the crust: In a large mixing bowl, combine the 2 cups of flour, 1/2 cup of sugar, baking powder, and salt. Add the softened butter, egg, and 1 teaspoon of vanilla extract. Mix until the dough comes together.
- Press the dough into the bottom of the prepared baking dish, creating an even layer. Bake for 15 minutes while preparing the filling and topping.
- For the filling: In a separate bowl, combine the chopped peaches, 1/4 cup of sugar, cornstarch, cinnamon, lemon juice, and 1/4 teaspoon of vanilla extract. Stir to coat the peaches evenly.
- For the topping: In a small bowl, combine the oats, light brown sugar, 1/4 cup of flour, and 1/4 teaspoon of cinnamon. Cut the cold butter into the mixture until it forms crumbs.
- Remove the crust from the oven after 15 minutes. Spread the peach filling evenly over the crust, then sprinkle the topping mixture over the peaches.
- Return the dish to the oven and bake for 35-40 minutes, or until the topping is golden and the filling is bubbly.
- Let the bars cool completely in the pan before slicing into squares and serving.
Notes
Frozen peaches can be used as a substitute for fresh ones. Ensure they are thawed and excess liquid is drained.
For a crunchy topping, add chopped nuts like pecans or almonds to the oat mixture.
A dash of nutmeg or a spoonful of honey in the filling can add a different flavor twist.
Storage: Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week.
Reheating: Reheat in the microwave for 15-20 seconds or in a 350°F oven for 5-10 minutes.
