Description

Peach Pie Bars combine the flavors of a traditional peach pie in a convenient bar form. A buttery crust, sweet peach filling, and a crisp topping make these bars a perfect summer treat.


Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

2 cups fresh peaches, peeled and chopped

1/4 cup granulated sugar (for filling)

1 tablespoon cornstarch

1/4 teaspoon cinnamon

1 tablespoon lemon juice

1/4 teaspoon vanilla extract (for filling)

1/2 cup rolled oats

1/4 cup light brown sugar

1/4 cup all-purpose flour (for topping)

1/4 teaspoon ground cinnamon

1/4 cup unsalted butter, cold and cubed


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. For the crust: In a large mixing bowl, combine the 2 cups of flour, 1/2 cup of sugar, baking powder, and salt. Add the softened butter, egg, and 1 teaspoon of vanilla extract. Mix until the dough comes together.
  3. Press the dough into the bottom of the prepared baking dish, creating an even layer. Bake for 15 minutes while preparing the filling and topping.
  4. For the filling: In a separate bowl, combine the chopped peaches, 1/4 cup of sugar, cornstarch, cinnamon, lemon juice, and 1/4 teaspoon of vanilla extract. Stir to coat the peaches evenly.
  5. For the topping: In a small bowl, combine the oats, light brown sugar, 1/4 cup of flour, and 1/4 teaspoon of cinnamon. Cut the cold butter into the mixture until it forms crumbs.
  6. Remove the crust from the oven after 15 minutes. Spread the peach filling evenly over the crust, then sprinkle the topping mixture over the peaches.
  7. Return the dish to the oven and bake for 35-40 minutes, or until the topping is golden and the filling is bubbly.
  8. Let the bars cool completely in the pan before slicing into squares and serving.

Notes

Frozen peaches can be used as a substitute for fresh ones. Ensure they are thawed and excess liquid is drained.

For a crunchy topping, add chopped nuts like pecans or almonds to the oat mixture.

A dash of nutmeg or a spoonful of honey in the filling can add a different flavor twist.

Storage: Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week.

Reheating: Reheat in the microwave for 15-20 seconds or in a 350°F oven for 5-10 minutes.
