Description

Peanut Butter Pretzel Buckeyes combine creamy peanut butter, salty pretzels, and smooth chocolate into a fun, indulgent treat perfect for any occasion.


Ingredients

1 cup creamy peanut butter (not natural or oily)

1/4 cup unsalted butter, softened

1/2 teaspoon vanilla extract

1 ½ to 2 cups powdered sugar (adjust for consistency)

1 ½ cups mini pretzels (crushed into small bits)

2 cups semi-sweet or milk chocolate chips

1 tablespoon coconut oil or shortening (optional, for smoother dipping)


Instructions

  1. In a mixing bowl, cream together the peanut butter, butter, and vanilla extract. Gradually mix in powdered sugar until the mixture is firm but moldable. Stir in the crushed pretzels, ensuring the mixture is stiff enough to roll into balls. If it's too soft, add more powdered sugar or chill the mixture for 15 minutes.
  2. Roll the mixture into 1-inch balls and place them on a parchment-lined tray. Chill them in the freezer for 20–30 minutes until firm.
  3. While the peanut butter balls chill, melt the chocolate chips in a microwave or double boiler with coconut oil (if using) until smooth and creamy.
  4. Use a toothpick to dip each peanut butter ball into the melted chocolate, leaving the top center exposed. Once dipped, place them back on the tray and smooth over the toothpick hole if desired.
  5. Refrigerate the buckeyes for 15–20 minutes or until the chocolate coating is firm.

Notes

You can adjust the sweetness by varying the amount of powdered sugar.

For extra crunch, press a whole pretzel piece onto the top of each buckeye before dipping into the chocolate.

If you prefer a more decadent treat, dip the buckeyes fully in chocolate.

Store the buckeyes in an airtight container in the fridge for up to a week, or freeze them for longer storage.
