Description

A creamy and refreshing pistachio frozen yogurt with a perfect balance of nutty richness and tangy sweetness. This light yet indulgent dessert is ideal for warm days.


Ingredients

2 cups plain Greek yogurt

1 cup shelled pistachios (unsalted)

3/4 cup sugar

1/2 cup whole milk

1 teaspoon vanilla extract

1/4 teaspoon salt


Instructions

  1. Place the pistachios in a food processor and blend until very finely ground, almost forming a paste.
  2. In a mixing bowl, combine the Greek yogurt, sugar, milk, vanilla extract, and salt. Stir until the sugar fully dissolves and the mixture is smooth.
  3. Add the ground pistachios to the yogurt mixture and mix thoroughly until well combined.
  4. Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  5. For a firmer texture, transfer to an airtight container and freeze for 2–3 hours before serving.

Notes

Swap part of the sugar with honey for a more natural sweetness.

Fold in chopped pistachios after churning for added texture.

Add a splash of rose water for a subtle floral flavor.

Store in an airtight container in the freezer for up to 1 week.

Let sit at room temperature for a few minutes before scooping for easier serving.

If no ice cream maker is available, freeze and stir every 30 minutes until creamy.
