1 cup shelled pistachios, finely ground

8 oz cream cheese, softened

1 cup white chocolate chips, melted

1 teaspoon vanilla extract

½ cup freeze-dried raspberries, crushed (plus extra for rolling)

Directions

In a medium bowl, I combine the softened cream cheese and melted white chocolate until the mixture is smooth and well blended.
