Description

Soft and chewy Pumpkin Snickerdoodle Cookies combine rich pumpkin puree, warm autumn spices, and a sweet cinnamon-sugar coating. With tender centers and lightly crisp edges, these homemade cookies are perfect for fall gatherings, Thanksgiving, and holiday baking.

Ingredients

1/2 cup unsalted butter, softened

1/3 cup pumpkin puree

1/2 cup granulated sugar

1/2 cup light brown sugar, packed

1 large egg yolk

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon cream of tartar

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

For the Cinnamon-Sugar Coating:

1/4 cup granulated sugar

1 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, combine the softened butter, pumpkin puree, granulated sugar, and packed light brown sugar. Beat until smooth and creamy.
  3. Add the egg yolk and vanilla extract. Mix until fully incorporated into the pumpkin mixture.
  4. In a separate bowl, whisk together the all-purpose flour, cream of tartar, baking soda, baking powder, ground cinnamon, pumpkin pie spice, and salt until evenly combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until a soft cookie dough forms. Avoid overmixing to maintain a tender texture.
  6. In a small bowl, combine the granulated sugar and ground cinnamon for the coating. Stir until evenly mixed.
  7. Using a tablespoon or small cookie scoop, portion the dough into approximately 24 evenly sized balls. Roll each dough ball generously in the cinnamon-sugar mixture until completely coated. If the dough is too sticky, refrigerate for 20–30 minutes before shaping.
  8. Arrange the coated dough balls on the prepared baking sheets, leaving approximately 2 inches between each cookie. Gently flatten each ball with your fingers.
  9. Bake for 10–12 minutes, or until the edges are set and the centers remain slightly soft. Avoid overbaking to preserve the chewy texture.
  10. Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes. Transfer to a wire rack to cool completely. Serve slightly warm or at room temperature.

Notes

Ingredient quantities are estimated because the original recipe does not specify exact measurements. Adjust as needed for your preferred dough consistency.

Use pure pumpkin puree rather than pumpkin pie filling to control the sweetness and spice levels.

If using homemade pumpkin puree, drain excess moisture before adding it to the dough.

For softer, chewier cookies, avoid overmixing the dough and remove the cookies from the oven while the centers are still slightly soft.

If the dough feels sticky or difficult to shape, refrigerate it for 20–30 minutes before rolling.

For chocolate chip pumpkin snickerdoodles, fold 1/2 cup mini chocolate chips into the dough before shaping.

For a maple variation, replace a small portion of the vanilla extract with maple extract.

For extra spice, add a small pinch of ground nutmeg, ginger, or cloves.

For a richer flavor, try using cooled, softened browned butter, noting that the dough may require moisture adjustments.

For a sweeter variation, fold white chocolate chips into the cookie dough.

Store cooled cookies in an airtight container at room temperature for up to 3 days.

Refrigerate cookies in an airtight container for up to 5–7 days. Allow them to reach room temperature before serving.

Freeze fully cooled cookies in a freezer-safe container for up to 3 months, separating layers with parchment paper.

Freeze unbaked dough balls until firm, then transfer to a freezer-safe bag. Roll in cinnamon sugar before baking and add a few extra minutes to the baking time if baking from frozen.

Prepared cookie dough can be refrigerated in a covered container for up to 24–48 hours before baking.

To reheat, microwave an individual cookie for 8–10 seconds or warm in a 300°F (150°C) oven for 3–5 minutes.

Serve with coffee, tea, hot chocolate, or warm apple cider for a cozy autumn treat.

Optional chilling time is not included in the total preparation time.
