Description

This Samoas Cookie Pie combines a soft buttery cookie crust with layers of chocolate, sweetened coconut, caramel, and sweetened condensed milk for a rich, gooey dessert inspired by the classic Samoa cookie. Perfect for holidays, parties, or whenever you're craving an indulgent treat.


Ingredients

½ cup unsalted butter, melted

1 large egg

½ cup packed light brown sugar

1 teaspoon vanilla extract

1¼ cups all-purpose flour

¼ teaspoon salt

¾ cup semi-sweet chocolate chips

1½ cups sweetened shredded coconut

10 ounces sweetened condensed milk

4 to 5 ounces salted caramel sauce

¾ cup semi-sweet chocolate chips, melted


Instructions

  1. Preheat the oven to 350°F (175°C) and generously grease a 9-inch pie dish.
  2. In a large mixing bowl, whisk together the melted butter, egg, brown sugar, and vanilla extract until smooth.
  3. Stir in the flour and salt just until combined without overmixing.
  4. Spread the cookie dough evenly into the prepared pie dish.
  5. Bake for 10 to 12 minutes, until the edges begin to set.
  6. Remove the pie from the oven and evenly sprinkle the chocolate chips over the warm crust.
  7. Spread the shredded coconut evenly over the chocolate layer.
  8. Drizzle the sweetened condensed milk evenly over the coconut, followed by the salted caramel sauce.
  9. Return the pie to the oven and bake for about 25 minutes, or until the filling is bubbling around the edges and the center is set.
  10. Remove from the oven and drizzle the melted chocolate over the top.
  11. Cool for at least 4 hours before slicing and serving.

Notes

Dark chocolate chips can be substituted for semi-sweet chocolate chips.

Add chopped toasted pecans or almonds for extra crunch.

Homemade salted caramel sauce adds even richer flavor.

Sprinkle flaky sea salt over the chocolate drizzle for a sweet-and-salty finish.

Store covered in the refrigerator for up to 5 days.

Freeze individual slices or the whole pie for up to 3 months and thaw overnight in the refrigerator.

Warm slices in the microwave for 10 to 15 seconds for an extra gooey texture.
