Description

This Simple Green Salad combines tender mixed greens, crisp cucumber, juicy cherry tomatoes, red onion, and creamy avocado with a bright homemade lemon vinaigrette. Ready in just 10 minutes, it's a fresh, colorful, and healthy side dish perfect for any meal.

Ingredients

6 cups mixed green lettuce

1 small cucumber, thinly sliced

1 cup cherry tomatoes, halved

1/4 small red onion, thinly sliced

1/2 avocado, sliced

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1 teaspoon honey

1/4 teaspoon salt

1/8 teaspoon black pepper

Instructions

  1. Wash the mixed green lettuce thoroughly under cold running water. Dry completely using a salad spinner or clean kitchen towel, then transfer to a large salad bowl.
  2. Thinly slice the cucumber and red onion, halve the cherry tomatoes, and slice the avocado. Arrange the prepared vegetables evenly over the mixed greens.
  3. In a small mixing bowl, combine the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, salt, and black pepper. Whisk until smooth and slightly creamy.
  4. Just before serving, drizzle the homemade lemon vinaigrette evenly over the prepared salad.
  5. Using salad tongs or two large spoons, gently toss the greens and vegetables until lightly coated with dressing. Be careful not to mash the avocado.
  6. Serve immediately while the vegetables are fresh and crisp. For an attractive presentation, reserve a few avocado slices and cherry tomatoes to arrange on top.

Notes

Best greens: Use a combination of romaine lettuce, baby spinach, butter lettuce, or spring mix for a balance of crunchy and tender textures.

Dry the lettuce thoroughly before assembling to prevent the dressing from becoming watery and the salad from turning soggy.

Vegan variation: Replace the honey with maple syrup or agave syrup.

Mediterranean variation: Add crumbled feta cheese, Kalamata olives, and fresh parsley.

Protein variation: Add grilled chicken, chickpeas, boiled eggs, or grilled shrimp for a more filling meal.

Extra crunch: Sprinkle with toasted almonds, walnuts, sunflower seeds, or pumpkin seeds.

Additional vegetables: Try shredded carrots, sliced radishes, bell peppers, or sugar snap peas.

For extra creaminess, use one whole avocado and add a little more fresh lemon juice.

Make ahead: Wash and dry the lettuce, chop the vegetables, and prepare the vinaigrette separately. Refrigerate and combine just before serving.

Storage: Keep washed and dried lettuce in an airtight container lined with a paper towel. Store prepared cucumber, tomatoes, and onion separately in the refrigerator for 1–2 days.

Avocado tip: Slice the avocado immediately before serving to minimize browning.

Dressing storage: Refrigerate leftover lemon vinaigrette in a tightly sealed jar for up to 3–4 days. Shake well before using.

Leftovers: Refrigerate dressed salad promptly and consume within 24 hours, although the greens may soften and the avocado may discolor.

Serving suggestions: Pair with grilled chicken, baked salmon, roasted vegetables, pasta, sandwiches, or homemade soup.

Serve cold. This salad does not require reheating.
