Description

This Slow Cooker Chicken Jambalaya combines tender chicken, smoky andouille sausage, colorful bell peppers, tomatoes, and Cajun spices with fluffy rice for a hearty, flavorful Louisiana-inspired one-pot dinner.

Ingredients

1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces

12 ounces smoked andouille sausage, sliced

1 medium onion, diced

2 celery stalks, diced

1 green bell pepper, diced

1 red bell pepper, diced

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes

2 cups low-sodium chicken broth

1 tablespoon tomato paste

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1/4 teaspoon black pepper

1 bay leaf

1 cup long-grain white rice, uncooked

2 tablespoons chopped fresh parsley

2 green onions, sliced

Instructions

  1. Prepare the ingredients by cutting the chicken breasts into bite-sized pieces, slicing the andouille sausage, dicing the onion, celery, and bell peppers, and mincing the garlic.
  2. Place the chicken, sausage, onion, celery, green bell pepper, red bell pepper, and garlic into the slow cooker.
  3. Add the diced tomatoes, chicken broth, tomato paste, Cajun seasoning, smoked paprika, oregano, thyme, black pepper, and bay leaf. Stir thoroughly to combine and distribute the seasonings evenly.
  4. Cover the slow cooker and cook on Low for 6 to 7 hours or High for 3 to 4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. Remove and discard the bay leaf. Stir in the uncooked long-grain white rice, making sure the grains are submerged in the cooking liquid as much as possible.
  6. Cover and cook on High for another 30 to 45 minutes, or until the rice is tender. Stir once halfway through if necessary. If the mixture becomes too dry before the rice finishes cooking, add a small amount of hot chicken broth.
  7. Taste the jambalaya and adjust the seasoning as desired. Add extra Cajun seasoning or hot sauce for more heat, or a small pinch of salt if needed.
  8. Sprinkle the chopped fresh parsley and sliced green onions over the jambalaya. Serve warm directly from the slow cooker, with additional hot sauce if desired.

Notes

For a spicier jambalaya, add extra Cajun seasoning, cayenne pepper, chopped jalapeños, or Louisiana-style hot sauce.

For chicken and shrimp jambalaya, add peeled and deveined shrimp when the rice is nearly tender and cook until the shrimp are opaque and reach 145°F (63°C).

Boneless, skinless chicken thighs can replace chicken breasts for a juicier, richer result.

Substitute andouille sausage with fully cooked kielbasa or smoked turkey sausage if preferred.

For a milder, family-friendly version, use mild smoked sausage and reduce the Cajun seasoning.

Add okra, zucchini, or mushrooms for extra vegetables. Add tender vegetables toward the end to prevent overcooking.

For a brown rice variation, cook the brown rice separately and stir it into the finished jambalaya before serving.

Use long-grain white rice and add it only during the final cooking stage to help prevent mushy rice. Avoid excessive stirring.

Slow cooker temperatures vary, so check the rice after 30 minutes and extend cooking time if necessary.

Prepare the vegetables, sausage, and seasonings ahead of time. Refrigerate raw chicken separately and keep uncooked rice aside until the final cooking stage.

Serve with cornbread, a fresh green salad, roasted vegetables, or sautéed green beans.

Refrigerate leftovers promptly in shallow, airtight containers within 2 hours of cooking. Store at 40°F (4°C) or below for up to 3 to 4 days.

Freeze cooled portions in freezer-safe containers for up to 2 to 3 months for best quality.

Reheat leftovers with a splash of broth or water on the stovetop or in the microwave until they reach 165°F (74°C). Reheat only the portion needed.
