Description
A bold and zesty Mexican-inspired chicken marinade made with smoky chipotle, fresh lime juice, cilantro, and warm spices. Perfect for grilling, roasting, or pan-frying to create juicy, flavorful chicken.
Ingredients
Juice of 2 limes
⅓ cup vegetable oil
2 tablespoons chipotle paste
1 teaspoon chili powder or chili flakes
1 teaspoon sweet paprika
½ cup cilantro, chopped
1 teaspoon cumin powder
1½ tablespoons onion powder
1½ tablespoons dried oregano
2 teaspoons garlic powder
½ teaspoon black pepper
1½ teaspoons salt
Instructions
- Add all ingredients to a resealable bag, jar, or mixing bowl.
- Shake or whisk until the spices are evenly combined.
- Add the chicken and coat each piece thoroughly with the marinade.
- Seal or cover and refrigerate for at least 30 minutes for smaller cuts or up to 6 hours for larger bone-in pieces.
- Cook the chicken by grilling, roasting, or pan-frying until it reaches an internal temperature of 165°F (74°C).
Notes
Substitute olive oil for vegetable oil for a richer flavor.
Add cayenne pepper or extra chipotle paste for additional heat.
Stir in 1 teaspoon of honey for a touch of sweetness.
Add extra fresh cilantro just before marinating for brighter herbal flavor.
This marinade also works well with shrimp, turkey, and vegetables.
Store unused marinade in the refrigerator for up to 3 days.
Discard marinade that has contacted raw chicken or boil it thoroughly before using as a sauce.
