Description

Strawberry Banana Cheesecake Salad is a creamy, refreshing no-bake dessert featuring fresh strawberries and bananas coated in a rich cheesecake-flavored dressing. Perfect for potlucks, picnics, family gatherings, or an easy summer treat.


Ingredients

8 ounces cream cheese, softened

3.4 ounces instant cheesecake pudding mix, dry

1/4 cup vanilla coffee creamer

2 pounds strawberries, hulled and sliced

3 medium bananas, sliced

2 tablespoons fresh lemon juice


Instructions

  1. Beat the softened cream cheese in a medium mixing bowl until smooth and creamy.
  2. Add the dry cheesecake pudding mix and mix until fully combined.
  3. Slowly pour in the vanilla coffee creamer while mixing on low speed until incorporated.
  4. Increase the mixer speed and beat until the mixture is light, fluffy, and creamy.
  5. In a large bowl, combine the sliced strawberries, sliced bananas, and lemon juice, tossing gently to coat the fruit.
  6. Add the cheesecake mixture to the fruit and carefully fold until all of the fruit is evenly coated.
  7. Serve immediately or refrigerate until ready to serve.

Notes

Add blueberries or raspberries for extra color and flavor.

Mix in chopped pecans, walnuts, mini marshmallows, or shredded coconut for added texture.

Substitute vanilla coffee creamer with milk, half-and-half, heavy cream, or flavored creamer if desired.

Sprinkle crushed graham crackers over the top just before serving for a cheesecake-inspired finish.

Store in an airtight container in the refrigerator for up to 2 days. Best enjoyed the day it is made. Do not freeze.
