Ingredients
1 cup fresh strawberries, diced
1 cup plain Greek yogurt
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
1/4 cup granola (optional, for topping)
Instructions
- Line a mini muffin tin with silicone liners or use parchment paper on a baking sheet.
- In a mixing bowl, stir together the Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
- Gently fold in the diced strawberries.
- Spoon the mixture into the muffin tin or drop onto the baking sheet in small, bite-sized rounds.
- If using, sprinkle granola on top of each bite.
- Freeze for at least 2–3 hours until firm.
- Once frozen, pop them out and store in an airtight container in the freezer.
Notes
Swap strawberries for blueberries, raspberries, or mango for variety.
For a dairy-free option, use coconut yogurt and maple syrup.
Add peanut butter or mini chocolate chips for a fun twist.
Best enjoyed straight from the freezer, but can sit out for 1 minute for creamier texture.
Use thawed and drained frozen strawberries if fresh ones aren't available.
