Description

Strawberry Shortcake Protein Bites are no-bake, bite-sized snacks made with wholesome ingredients like oat flour, protein powder, and freeze-dried strawberries. They're soft, chewy, naturally sweetened, and perfect for a quick snack or post-workout energy boost.


Ingredients

1 cup oat flour

1/2 cup vanilla protein powder (plant-based or whey)

1/4 cup freeze-dried strawberries, crushed

1/4 cup unsweetened almond milk (plus more if needed)

2 tablespoons honey or maple syrup

1/4 teaspoon vanilla extract

Pinch of salt

Optional: extra crushed freeze-dried strawberries for rolling


Instructions

  1. In a large bowl, combine oat flour, protein powder, crushed freeze-dried strawberries, and a pinch of salt.
  2. Add almond milk, honey or maple syrup, and vanilla extract. Stir until a dough forms.
  3. If the dough is too dry, add more almond milk one teaspoon at a time until it comes together.
  4. Roll the dough into bite-sized balls using your hands.
  5. Optional: Roll each bite in additional crushed freeze-dried strawberries for extra flavor and color.
  6. Place bites in an airtight container and chill in the fridge for at least 20 minutes before serving.

Notes

Store in the fridge for up to a week or freeze for up to 2 months.

Use maple syrup and plant-based protein to make them vegan.

Certified gluten-free oat flour makes them gluten-free.

Add almond or peanut butter for a richer flavor.

Swap strawberries with raspberries or blueberries for variation.
