Ingredients
1 cup oat flour
1/2 cup vanilla protein powder (plant-based or whey)
1/4 cup freeze-dried strawberries, crushed
1/4 cup unsweetened almond milk (plus more if needed)
2 tablespoons honey or maple syrup
1/4 teaspoon vanilla extract
Pinch of salt
Optional: extra crushed freeze-dried strawberries for rolling
Instructions
- In a large bowl, combine oat flour, protein powder, crushed freeze-dried strawberries, and a pinch of salt.
- Add almond milk, honey or maple syrup, and vanilla extract. Stir until a dough forms.
- If the dough is too dry, add more almond milk one teaspoon at a time until it comes together.
- Roll the dough into bite-sized balls using your hands.
- Optional: Roll each bite in additional crushed freeze-dried strawberries for extra flavor and color.
- Place bites in an airtight container and chill in the fridge for at least 20 minutes before serving.
