Description

These Super Fudgy Brownie Cookies combine the rich, intense flavor of brownies with the chewy texture of cookies. They feature crackly tops, soft edges, and irresistibly gooey centers for the ultimate chocolate treat.


Ingredients

8 ounces bittersweet chocolate, chopped

6 tablespoons unsalted butter

3/4 cup brown sugar

1/4 cup granulated sugar

2 large eggs, room temperature

3/4 cup all-purpose flour

1/4 cup cocoa powder

1/4 teaspoon salt

2 teaspoons espresso powder


Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Combine the chopped chocolate and butter in a microwave-safe bowl. Microwave in 15-second intervals, stirring after each interval, until smooth and fully melted. Set aside.
  3. In a stand mixer fitted with the whisk attachment, beat the eggs, brown sugar, and granulated sugar on high speed for about 3 minutes until pale and fluffy.
  4. Reduce the mixer speed to low and slowly pour in the melted chocolate mixture, mixing until fully combined.
  5. Add the flour, cocoa powder, salt, and espresso powder. Mix just until the dough comes together without overmixing.
  6. Scoop the dough immediately onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  7. Bake for 10 minutes until the tops are crackly, the edges are set, and the centers remain slightly soft.
  8. Allow the cookies to cool on the baking sheets before serving so they finish setting while remaining fudgy.

Notes

Substitute dark chocolate for bittersweet chocolate for a richer flavor.

Fold in chocolate chips, chopped walnuts, or pecans for added texture.

Sprinkle flaky sea salt on top before baking to enhance the chocolate flavor.

Add 1 teaspoon vanilla extract for extra depth of flavor.

Store in an airtight container at room temperature for up to 4 days.
