Description

These Sweet and Sour Watermelon Gummies are fruity, chewy homemade candies made with fresh watermelon juice, honey, and citrus. Finished with a tangy sugar coating, they offer the perfect balance of refreshing sweetness and sour flavor.

Ingredients

2 cups seedless watermelon, cubed

3 tablespoons fresh lemon juice

2 tablespoons fresh lime juice

3 tablespoons honey

4 tablespoons unflavored gelatin powder

2 tablespoons granulated sugar

1/2 teaspoon citric acid

Instructions

  1. Place the cubed seedless watermelon in a blender and blend until completely smooth.
  2. Pour the watermelon puree through a fine-mesh sieve to remove excess pulp. Measure exactly 1 cup of strained watermelon juice.
  3. Pour the strained watermelon juice into a small saucepan. Add the fresh lemon juice, lime juice, and honey. Stir gently until combined.
  4. Sprinkle the unflavored gelatin evenly over the watermelon mixture. Let it sit undisturbed for approximately 5 minutes to allow the gelatin to bloom.
  5. Place the saucepan over low heat and stir continuously for 3–5 minutes until the gelatin dissolves completely and the mixture becomes smooth. Do not allow the mixture to boil.
  6. Carefully pour the mixture into silicone gummy molds. Use a small dropper if necessary to fill the molds neatly.
  7. Transfer the molds to the refrigerator and chill for 2–3 hours, or until the gummies are completely firm and hold their shape.
  8. In a small bowl, combine the granulated sugar and citric acid. Gently remove the firm gummies from their molds and lightly toss them in the sweet-and-sour coating just before serving.

Notes

Use ripe, juicy watermelon for the best natural sweetness and fresh fruit flavor.

Measure exactly 1 cup of strained watermelon juice to maintain the proper gelatin-to-liquid ratio.

Avoid boiling the gelatin mixture because excessive heat can interfere with its setting properties.

For extra sour gummies, gradually increase the citric acid in the coating according to taste.

For strawberry watermelon gummies, replace part of the watermelon with fresh strawberries, keeping the total strained juice at 1 cup.

For a naturally sweetened variation, omit the granulated sugar and citric acid coating.

For tropical gummies, replace a small portion of the watermelon juice with mango or pineapple juice while maintaining the same total liquid measurement. Fresh pineapple contains enzymes that can prevent gelatin from setting, so use heat-treated pineapple juice.

For a stronger lime flavor, replace some of the lemon juice with additional fresh lime juice.

Store uncoated gummies in an airtight container in the refrigerator for up to 5 days. Separate layers with parchment paper to prevent sticking.

Add the sugar and citric acid coating immediately before serving to prevent it from dissolving and becoming sticky.

Freezing is not recommended because thawing can make the gummies watery or sticky.

Serve chilled for the best chewy texture and refreshing flavor. Reheating is not necessary.

Gelatin is not vegetarian. Agar-agar may be used in a separately adapted recipe, but it requires different preparation and produces a firmer texture.

The number of individual gummies depends on the size and shape of the silicone molds.
