Ingredients
4 boneless, skinless chicken breasts
1 cup pineapple juice
1 cup crushed pineapple (drained)
1/4 cup soy sauce
1/4 cup brown sugar
1 tablespoon cornstarch
1 teaspoon garlic powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
Cooked rice (optional, for serving)
Instructions

Place chicken breasts in the bottom of the crockpot.

In a bowl, whisk together pineapple juice, crushed pineapple, soy sauce, brown sugar, garlic powder, ground ginger, salt, and pepper.

Pour the mixture over the chicken and coat evenly.

Cover and cook on low for 4–6 hours until the chicken is fully cooked and tender.

Remove chicken and set aside.

Mix cornstarch with 1 tablespoon water to make a slurry and stir into the crockpot sauce.

Cook on high for 15 minutes until sauce thickens.

Shred chicken and return to crockpot, stirring to coat with sauce.

Notes
Use boneless thighs for richer flavor.
Add sriracha or red pepper flakes for heat.
Toss in bell peppers or onions in the last hour for extra texture.
