Description

These viral scoopable cookies combine crisp golden edges with a soft, gooey chocolate-filled center in one easy, shareable baking dish. Serve them warm with vanilla ice cream for an indulgent chocolate chip cookie dessert.

Ingredients

Unsalted butter, melted and cooled

Brown sugar, light or dark

Granulated sugar

Vanilla extract

Kosher salt

Egg yolks

All-purpose flour

Baking soda

Chocolate chips or chocolate chunks

Instructions

  1. Preheat the oven to 350°F (180°C) and line a 7-inch (18 cm) baking dish with parchment paper.
  2. Whisk the melted and cooled butter with the brown sugar, granulated sugar, kosher salt, and vanilla extract until smooth and well combined.
  3. Add the egg yolks and mix until the mixture is silky and uniform.
  4. Fold in the all-purpose flour and baking soda with a spatula just until no dry streaks remain. Avoid overmixing.
  5. Gently fold in most of the chocolate chips or chocolate chunks, reserving a small amount for the centers.
  6. Divide the dough into 6 equal portions. Flatten each portion slightly, add some reserved chocolate to the center, and seal the dough around the chocolate to form a ball.
  7. Arrange all 6 dough balls tightly in the prepared baking dish, allowing them to touch.
  8. Bake for approximately 20 minutes, until the edges are golden and set while the center remains soft and slightly underbaked.
  9. Remove from the oven and let the cookies rest briefly. Serve warm directly from the baking dish, optionally topped with vanilla ice cream.

Notes

Semisweet chocolate chips, chocolate chunks, or chopped chocolate all work well.

For a deeper chocolate flavor, substitute dark chocolate chunks; for a sweeter version, use milk chocolate.

Chopped walnuts, pecans, or hazelnuts can be folded into the dough for added crunch.

Sprinkle flaky sea salt over the cookies immediately after baking for a salted chocolate variation.

For extra-gooey centers, add additional chopped chocolate inside each dough ball and avoid overbaking.

Store cooled leftovers covered at room temperature for about 2 days or refrigerated for up to 4–5 days.

Reheat individual portions briefly in the microwave, or warm larger portions at 300°F (150°C) until heated through.

The dough can be prepared and shaped ahead of time and refrigerated. Very cold dough may require slightly more baking time.

Serve warm with vanilla ice cream, chocolate sauce, caramel sauce, whipped cream, fresh berries, or flaky sea salt.
