Description

This Watermelon Feta Salad is a refreshing and flavorful summer dish that combines sweet watermelon, creamy feta cheese, and fresh mint, all dressed in olive oil and balsamic vinegar. Ideal for hot weather, picnics, or BBQs, this quick and easy salad is naturally gluten-free and can be customized with variations like cucumber, goat cheese, or arugula for a delicious twist.

Ingredients

4 cups watermelon, cubed

1 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Instructions

  1. In a large bowl, combine the watermelon cubes and crumbled feta cheese.

  2. Add the chopped mint leaves and gently toss to combine.

  3. Drizzle olive oil and balsamic vinegar over the salad, then season with salt and pepper.

  4. Toss again to evenly coat the ingredients.

  5. Serve immediately or refrigerate for up to 30 minutes for a chilled salad.

Notes

For a crunchier texture, add cucumber or nuts like toasted walnuts or pistachios.

If you don't have balsamic vinegar, red wine vinegar or lemon juice are great alternatives.

To make this salad more filling, consider adding grilled chicken or chickpeas.
