Description

This Zesty Party Pasta Salad is a bold and colorful cold pasta dish packed with crisp vegetables, savory chicken and beef pepperoni, cheese, and tangy Italian dressing. Perfect for potlucks, meal prep, or gatherings, this refreshing salad tastes even better after chilling.


Ingredients

1/2 pound spaghetti noodles

1 green bell pepper, diced

1/2 red onion, finely chopped

1/2 English cucumber, diced

2 Roma tomatoes, diced

Handful of beef pepperoni, chopped

1 pack cooked chicken cubes

1/2 cup shredded cheddar cheese

2 tablespoons Parmesan cheese

1/3 packet ranch seasoning

2 teaspoons Cajun seasoning

2 teaspoons Salad Supreme seasoning

Italian dressing, to taste


Instructions

  1. Cook the spaghetti noodles according to package instructions until al dente. Drain and rinse with cold water until completely cooled.
  2. In a large mixing bowl, combine the cooled spaghetti with diced green bell pepper, red onion, cucumber, and tomatoes.
  3. Add the chopped beef pepperoni, cooked chicken cubes, shredded cheddar cheese, and Parmesan cheese.
  4. Sprinkle in the ranch seasoning, Cajun seasoning, and Salad Supreme seasoning.
  5. Slowly pour in the Italian dressing while tossing the salad until everything is evenly coated and reaches your desired consistency.
  6. Mix thoroughly to distribute all ingredients and seasonings evenly.
  7. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.

Notes

Rotini, penne, or bowtie pasta can be substituted for spaghetti noodles.

Add sliced jalapeños or extra Cajun seasoning for additional heat.

Black olives, banana peppers make great flavor additions.

Use turkey pepperoni and reduced-fat cheese for a lighter version.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Stir in extra Italian dressing before serving leftovers, as the pasta absorbs moisture while chilling.

This salad is best served cold and is not recommended for freezing.
