This creamy and flavorful rotisserie chicken salad is a quick and delicious meal, perfect for lunch or a light dinner. Made with tender shredded chicken, crunchy celery, and a tangy dressing, it’s both satisfying and refreshing. Whether served on its own, in a sandwich, or over a bed of greens, this salad is a must-try!

Rotisserie Chicken Salad

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

3 cups rotisserie chicken, shredded

½ cup mayonnaise

¼ cup Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon lemon juice

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup celery, finely chopped

¼ cup red onion, finely diced

¼ cup sliced almonds (optional)

¼ cup dried cranberries (optional)

1 tablespoon fresh parsley, chopped

Directions

In a large mixing bowl, I combine mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and black pepper. I mix well to create a creamy dressing.

I add the shredded rotisserie chicken, chopped celery, diced red onion, sliced almonds, and dried cranberries to the bowl.

I stir until all ingredients are well coated with the dressing.

I sprinkle fresh parsley over the top and mix again.

I cover and refrigerate for at least 30 minutes to allow the flavors to meld.

I serve chilled on its own, in a sandwich, or over a bed of lettuce.

Variations

Make it sweeter – I add more dried cranberries or a drizzle of honey.

Go nut-free – I skip the almonds or swap them for sunflower seeds.

Add crunch – Chopped apples or grapes give it a fresh, crisp texture.

Spice it up – A pinch of cayenne or a dash of hot sauce brings heat.

Lower the fat – I use all Greek yogurt instead of mayonnaise.

Storage and Reheating

I store leftover chicken salad in an airtight container in the refrigerator for up to 3 days. I stir it before serving, as the dressing may separate slightly. I don’t recommend freezing it, as the texture changes once thawed.

FAQs

How long does rotisserie chicken salad last in the fridge?

It stays fresh for up to 3 days when stored in an airtight container in the refrigerator.

Can I make this chicken salad ahead of time?

Yes! I actually prefer making it a day ahead to let the flavors develop even more.

What’s the best way to serve chicken salad?

I love it in a sandwich, on crackers, over greens, or even stuffed into a tomato or avocado.

Can I use canned chicken instead of rotisserie chicken?

Yes, but I find rotisserie chicken gives a better flavor and texture. If using canned chicken, I drain and shred it well before mixing.

How can I make this recipe dairy-free?

I replace Greek yogurt with more mayonnaise or a dairy-free yogurt alternative.

Conclusion

This rotisserie chicken salad is a simple yet flavorful dish that’s perfect for any occasion. It’s easy to prepare, packed with protein, and full of delicious textures and flavors. Whether I enjoy it as a quick lunch or a light dinner, this salad always hits the spot.
