Fruit Pizza is one of my favorite desserts whenever I want something colorful, refreshing, and easy to make. I combine a soft sugar cookie crust with a creamy cream cheese frosting and finish it with an assortment of fresh fruit for a beautiful dessert that's perfect for parties, family gatherings, summer celebrations, or simply treating myself. Every slice is packed with sweet flavors, creamy texture, and vibrant fruit that makes this dessert as impressive as it is delicious.

Ingredients

For the Cookie Crust:

1 ½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup packed light brown sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract

For the Frosting:

8 ounces cream cheese, softened

3 tablespoons honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

For the Topping:

2 cups fresh mixed fruit, sliced

Honey for drizzling (optional)

Directions

I preheat the oven to 350°F (175°C) and lightly grease a 12-inch pizza pan or a 9×13-inch baking dish.

I whisk together the flour, baking powder, and salt in a medium bowl.

In a separate bowl, I beat the softened butter and brown sugar until the mixture becomes light and fluffy.

I mix in the egg, vanilla extract, and almond extract until fully combined.

I gradually add the dry ingredients and stir just until a soft dough forms.

I press the dough evenly into the prepared pan and poke several holes with a fork to help it bake evenly.

I bake the crust for 15 to 18 minutes, or until it is lightly golden around the edges, then allow it to cool completely.

While the crust cools, I beat together the cream cheese, honey or maple syrup, vanilla extract, and a pinch of salt until smooth and creamy.

I spread the frosting evenly over the cooled cookie crust.

I arrange the sliced fresh fruit over the frosting in any pattern I like.

If I want a little extra shine and sweetness, I drizzle a small amount of honey over the fruit before slicing and serving.

Storage/Reheating

I store any leftover Fruit Pizza in an airtight container in the refrigerator for up to 3 days. Since the dessert contains cream cheese and fresh fruit, I always keep it chilled until serving. I do not recommend freezing it because the fruit and frosting can become watery after thawing. This dessert is best served cold, so I do not reheat it.
