Mango Sago Dessert Pudding is a creamy, refreshing dessert made with sweet mango purée, chewy tapioca pearls, coconut milk, and tender mango pieces. I love serving it chilled on warm days because it is fruity, light, and satisfyingly creamy without requiring any baking.

½ cup small tapioca pearls

3 ripe mangoes, peeled and chopped

1 cup coconut milk

½ cup evaporated milk

¼ cup sweetened condensed milk

½ cup mango cubes

For the best flavor, I use ripe mangoes that feel slightly soft and smell sweet near the stem. Naturally sweet mangoes give the pudding a stronger fruit flavor and may reduce the amount of condensed milk I need.

Directions

I bring 2 cups of water to a boil in a medium saucepan.

I add the tapioca pearls and cook them for 10 to 15 minutes, stirring occasionally to prevent them from sticking together. I continue cooking until the pearls are mostly translucent.

I turn off the heat, cover the saucepan, and let the tapioca pearls rest for 10 minutes. This helps the centers finish cooking.

I rinse the cooked pearls under cold water and drain them thoroughly. Rinsing removes excess starch and keeps the pearls from becoming overly sticky.

I place 2 chopped mangoes in a blender and blend them until smooth.

In a large mixing bowl, I combine the mango purée, coconut milk, evaporated milk, and sweetened condensed milk. I stir until the mixture is smooth and creamy.

I add the cooked sago pearls, mango cubes, nata de coco or mango jelly, and the remaining chopped mango. I stir gently so the fruit pieces remain intact.

I cover the bowl and refrigerate the pudding for at least 1 hour.

I serve the mango sago cold, adding a few ice cubes when I want it especially refreshing.

Storage/Reheating

I store leftover mango sago pudding in an airtight container in the refrigerator for up to 2 days. For the freshest flavor and texture, I prefer serving it within the first 24 hours.

The tapioca pearls may absorb liquid and become firmer as the pudding sits. Before serving leftovers, I stir in a small splash of coconut milk or evaporated milk to loosen the consistency.

I do not recommend freezing mango sago because freezing can change the texture of the tapioca pearls, mango pieces, and milk base.

This dessert does not require reheating. I serve it directly from the refrigerator because it tastes best cold.
