Peanut Quinoa Chicken Salad is one of my favorite ways to turn simple, wholesome ingredients into a fresh, colorful, and satisfying meal. I love how the tender shredded chicken, fluffy quinoa, crunchy vegetables, protein-rich edamame, and roasted peanuts come together in every bite. The creamy peanut-lime dressing adds a delicious combination of nutty, tangy, savory, and slightly sweet flavors that makes this salad especially irresistible.

Whenever I need a nutritious lunch, an easy weeknight dinner, or a make-ahead meal for busy days, I turn to this recipe. It's hearty enough to serve as a complete meal while still feeling light, refreshing, and full of vibrant flavors.

Peanut Quinoa Chicken Salad

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

For the Peanut Quinoa Chicken Salad:

1 cup uncooked quinoa, cooked according to package instructions

1 lb cooked chicken breast, shredded

1 bag (340 g) coleslaw mix, kale slaw, or broccoli slaw

3 green onions, thinly sliced

1 red bell pepper, finely diced

1 yellow or orange bell pepper, finely diced

1 cup matchstick carrots

¼ cup fresh mint leaves, chopped

¼ cup fresh cilantro leaves, chopped

1 cup edamame beans, cooked and cooled

⅔ cup unsalted roasted peanuts, chopped

For the Creamy Peanut-Lime Dressing:

⅓ cup peanut butter

3 tablespoons soy sauce

1 tablespoon sesame oil

2 limes, juice and zest

1–2 tablespoons honey

2 teaspoons fresh ginger, grated

2 tablespoons rice vinegar

2–3 tablespoons water, to adjust consistency

Directions

Cook the Quinoa and Prepare the Chicken:

I start by rinsing the quinoa under cold water to remove any bitterness. Then I cook it according to the package instructions until the grains become tender and fluffy.

Once the quinoa is cooked, I fluff it gently with a fork and set it aside to cool. I prefer allowing it to reach room temperature before mixing it with the vegetables so the salad stays crisp and fresh.

If my chicken isn't already cooked, I cook the chicken breasts until they reach an internal temperature of 165°F (74°C). After letting them rest briefly, I shred the meat using two forks.

Make the Creamy Peanut-Lime Dressing:

In a medium bowl, I whisk together the peanut butter, soy sauce, sesame oil, fresh lime juice, lime zest, honey, grated ginger, and rice vinegar.

I gradually add water, one tablespoon at a time, while whisking until the dressing becomes smooth, creamy, and easy to pour.

I usually start with one tablespoon of honey and taste the dressing before adding more. This allows me to adjust the sweetness without overpowering the tangy lime and savory soy sauce.

Prepare the Vegetables and Herbs:

While the quinoa cools, I prepare the fresh vegetables.

I finely dice the red and yellow bell peppers, slice the green onions, and chop the fresh mint and cilantro. I also make sure the edamame beans are cooked, drained, and cooled.

I like cutting the vegetables into small, evenly sized pieces because it helps distribute the different flavors and textures throughout the salad.

Assemble the Salad:

In a large mixing bowl, I combine the cooled quinoa, shredded chicken, coleslaw mix, sliced green onions, diced bell peppers, matchstick carrots, fresh mint, cilantro, edamame, and chopped roasted peanuts.

I gently toss everything together until the ingredients are evenly distributed.

At this stage, I love how colorful the salad looks, with the bright peppers, green herbs, orange carrots, and golden quinoa creating a beautiful mixture.

Add the Peanut Dressing:

I pour the creamy peanut-lime dressing over the salad and toss everything thoroughly using large salad spoons.

I make sure the quinoa, chicken, and vegetables are evenly coated with the dressing.

If the mixture looks a little dry, I add a small splash of water or fresh lime juice to loosen the dressing.

Serve and Enjoy:

I serve the salad immediately when I want the freshest, crunchiest texture.

For a chilled version, I refrigerate it briefly before serving. I always give the salad another gentle toss to redistribute the dressing.

Sometimes I finish each serving with extra chopped peanuts, fresh cilantro, or a squeeze of lime juice for even more flavor.

Variations

One of the things I enjoy most about this Peanut Quinoa Chicken Salad is how easily I can adapt it to different preferences and ingredients.

Make It Vegetarian:

When I want a meat-free version, I replace the shredded chicken with crispy baked tofu, extra edamame, or chickpeas. I also swap the honey for maple syrup when preparing a fully vegan version.

Add a Spicy Kick:

For extra heat, I mix a teaspoon of sriracha, chili garlic sauce, or crushed red pepper flakes into the peanut dressing.

I especially enjoy the contrast between the spicy dressing and the refreshing mint and cilantro.

Try Different Vegetables:

I sometimes add sliced cucumbers, shredded purple cabbage, sugar snap peas, or thinly sliced radishes for additional crunch.

I find that using a variety of colorful vegetables makes the salad even more appealing.

Make It Gluten-Free:

I use certified gluten-free tamari instead of regular soy sauce. I also check the labels of my other packaged ingredients to ensure they are gluten-free.

Change the Protein:

When I want something different, I replace the chicken with cooked shrimp, grilled turkey, or baked tofu.

Each option works beautifully with the creamy peanut-lime dressing.

Add More Crunch:

I occasionally sprinkle toasted sesame seeds, chopped cashews, or extra roasted peanuts over the salad just before serving.

This adds another layer of texture that I really enjoy.

Storage/Reheating

How I Store Leftovers:

I transfer leftover Peanut Quinoa Chicken Salad into an airtight container and refrigerate it promptly.

I generally keep the salad refrigerated for up to 3–4 days, provided the chicken and other ingredients were freshly cooked and handled safely.

For the best texture, I prefer storing the peanut dressing separately whenever I'm preparing the salad in advance.

This helps keep the vegetables crisp and prevents the quinoa from absorbing too much dressing.

How I Prepare It for Meal Prep:

When I make this salad for several lunches, I divide the quinoa, chicken, edamame, and vegetables into individual airtight containers.

I store the dressing separately in small containers and add the chopped peanuts just before eating.

This method helps preserve the fresh flavor and crunchy texture throughout the week.

Can I Freeze This Salad?

I don't recommend freezing the fully assembled salad because the fresh vegetables and herbs can become watery and lose their crunch after thawing.

However, I can freeze cooked quinoa and shredded chicken separately for future use.

I thaw them safely in the refrigerator before assembling a fresh salad.

How I Reheat It:

I prefer eating Peanut Quinoa Chicken Salad cold or at room temperature for a short period after removing it from the refrigerator.

Since the salad contains fresh vegetables, herbs, and creamy dressing, I don't recommend reheating the fully assembled mixture.

If I want a warm version, I heat the separately stored chicken and quinoa until thoroughly hot, then combine them with the fresh vegetables and peanut dressing.

FAQs

Can I Make Peanut Quinoa Chicken Salad Ahead of Time?

Absolutely! I often prepare the quinoa, chicken, vegetables, and peanut dressing ahead of time to make assembly quicker.

For the freshest results, I keep the dressing and roasted peanuts separate until I'm ready to serve. This prevents the vegetables from becoming soggy and helps maintain their crunch.

What Type of Peanut Butter Works Best for This Recipe?

I prefer smooth, creamy peanut butter because it blends easily with the soy sauce, lime juice, and other dressing ingredients.

Natural peanut butter also works well, although I make sure to stir it thoroughly before using it.

If the dressing becomes too thick, I simply add a little more water until it reaches my preferred consistency.

Can I Use a Different Grain Instead of Quinoa?

Yes! When I don't have quinoa available, I sometimes substitute cooked brown rice, farro, or couscous.

I especially enjoy brown rice because it has a pleasantly chewy texture that pairs nicely with the creamy peanut dressing.

For a gluten-free alternative, I stick with quinoa or certified gluten-free rice.

How Can I Prevent the Salad From Becoming Soggy?

I always let the quinoa cool completely before combining it with the fresh vegetables.

I also drain the edamame thoroughly and avoid adding the dressing too far in advance when I want maximum crunch.

For meal prep, I find that storing the dressing separately and adding the peanuts just before serving gives me the best results.

Is Peanut Quinoa Chicken Salad a Healthy Meal?

I consider this salad a nutritious and satisfying meal because it combines several important food groups.

The chicken, quinoa, edamame, and peanuts provide protein, while the vegetables contribute fiber, vitamins, and minerals. The peanuts, peanut butter, and sesame oil also add fats that help make the meal satisfying.

I can adjust the amount of honey, use reduced-sodium soy sauce, or modify the dressing quantity depending on my nutritional preferences.

Conclusion

Peanut Quinoa Chicken Salad is a recipe I love making whenever I want something fresh, colorful, nourishing, and full of flavor. The combination of tender chicken, fluffy quinoa, crisp vegetables, fragrant herbs, and crunchy roasted peanuts creates a wonderful balance of textures, while the creamy peanut-lime dressing ties everything together.

I especially appreciate how versatile this salad is. Whether I'm preparing a quick family dinner, packing lunches for the week, or making a refreshing dish for a gathering, it always feels like a satisfying choice.

With its simple preparation, wholesome ingredients, and delicious balance of sweet, savory, tangy, and nutty flavors, this Peanut Quinoa Chicken Salad has earned a regular place in my meal rotation.

Ingredients

1 cup uncooked quinoa, cooked according to package instructions

1 lb cooked chicken breast, shredded

1 bag (340 g) coleslaw mix, kale slaw, or broccoli slaw

3 green onions, thinly sliced

1 red bell pepper, finely diced

1 yellow or orange bell pepper, finely diced

1 cup matchstick carrots

¼ cup fresh mint leaves, chopped

¼ cup fresh cilantro leaves, chopped

1 cup edamame beans, cooked and cooled

⅔ cup unsalted roasted peanuts, chopped

⅓ cup peanut butter

3 tablespoons soy sauce

1 tablespoon sesame oil

2 limes, juice and zest

1–2 tablespoons honey

2 teaspoons fresh ginger, grated

2 tablespoons rice vinegar

2–3 tablespoons water, to adjust consistency

Instructions

  1. Rinse the quinoa thoroughly under cold water. Cook according to package instructions until tender and fluffy, approximately 15 minutes. Fluff with a fork and allow to cool to room temperature.
  2. If using uncooked chicken, cook the chicken breasts until the internal temperature reaches 165°F (74°C). Allow to rest briefly, then shred using two forks. Set aside to cool.
  3. Prepare the peanut-lime dressing by whisking together the peanut butter, soy sauce, sesame oil, lime juice, lime zest, honey, grated ginger, and rice vinegar in a medium bowl.
  4. Gradually whisk in 2–3 tablespoons of water until the dressing becomes smooth, creamy, and pourable. Taste and adjust the sweetness or lime juice as desired.
  5. Prepare the vegetables by finely dicing the bell peppers, slicing the green onions, and chopping the mint and cilantro. Ensure the edamame beans are cooked, drained, and cooled.
  6. In a large mixing bowl, combine the cooled quinoa, shredded chicken, coleslaw mix, green onions, bell peppers, matchstick carrots, mint, cilantro, edamame, and chopped roasted peanuts.
  7. Gently toss the salad ingredients until evenly distributed.
  8. Pour the creamy peanut-lime dressing over the salad. Toss thoroughly until the quinoa, chicken, and vegetables are evenly coated. Add a splash of water or fresh lime juice if the dressing needs thinning.
  9. Serve immediately for the freshest, crunchiest texture, or refrigerate briefly for a chilled salad. Garnish with additional chopped peanuts, fresh cilantro, or lime juice if desired.

Notes

Use creamy peanut butter for the smoothest dressing. Natural peanut butter works well when thoroughly stirred before measuring.

Save preparation time by using leftover cooked chicken or shredded rotisserie chicken.

Allow the quinoa to cool completely before combining it with fresh vegetables to maintain their crisp texture.

For a vegetarian variation, replace the chicken with baked tofu, chickpeas, or additional edamame.

For a vegan variation, substitute the chicken with tofu or chickpeas and replace the honey with maple syrup.

For a gluten-free version, replace regular soy sauce with certified gluten-free tamari and check packaged ingredient labels.

Add sriracha, chili garlic sauce, or crushed red pepper flakes to the dressing for a spicy variation.

Substitute quinoa with cooked brown rice, farro, or couscous for a different grain base.

Customize the vegetables with cucumber, shredded purple cabbage, sugar snap peas, or sliced radishes.

For extra crunch, garnish with toasted sesame seeds, chopped cashews, or additional roasted peanuts.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days, provided the chicken and other ingredients were freshly prepared and handled safely.

For meal prep, refrigerate the dressing separately and add the roasted peanuts just before serving to preserve the salad's crunchy texture.

Avoid freezing the assembled salad because the vegetables and herbs may become watery after thawing. Cooked quinoa and chicken can be frozen separately.

Serve cold or chilled. Avoid reheating the fully assembled salad. For a warm variation, heat separately stored chicken and quinoa before combining them with the fresh vegetables and dressing.

Use reduced-sodium soy sauce to lower sodium content, or adjust the honey to control sweetness.
