Glazed Salmon with Creamy Mashed Potatoes, Buttery Green Beans & Corn Muffins is one of my favorite ways to bring a comforting, Southern-inspired dinner to the table. I love how the tender, flaky salmon is coated in a rich honey garlic glaze that balances sweetness with savory flavors. Paired with fluffy mashed potatoes, buttery green beans, and warm, golden corn muffins, this meal brings together everything I enjoy about homemade comfort food.

What makes this dinner especially satisfying is the combination of textures and flavors. I get a deliciously sticky glaze on the salmon, smooth and creamy potatoes, perfectly seasoned vegetables, and soft corn muffins with lightly crisp edges. Whether I'm preparing a family dinner or making something special for the weekend, this complete meal always feels hearty, welcoming, and full of flavor.

Glazed Salmon with Creamy Mashed Potatoes, Buttery Green Beans & Corn Muffins

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

For the Glazed Salmon:

4 salmon fillets

Chef Bae All Purpose Seasoning, to taste

Black pepper, to taste

1 tablespoon olive oil

2 tablespoons butter

¼ cup brown sugar

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 garlic cloves, minced

Dried parsley, for garnish

For the Creamy Mashed Potatoes:

2 pounds russet potatoes, peeled and cut into chunks

4 tablespoons butter

½ cup heavy cream, warmed

Chef Bae All Purpose Seasoning, to taste

Black pepper, to taste

For the Buttery Green Beans:

1 pound green beans, trimmed

2 tablespoons butter

Chef Bae All Purpose Seasoning, to taste

Black pepper, to taste

For the Corn Muffins:

1 cup cornmeal

1 cup all-purpose flour

¼ cup granulated sugar

1 tablespoon baking powder

1 cup buttermilk

1 large egg

⅓ cup butter, melted

Directions

Preheat the Oven and Prepare the Muffin Pan:

I begin by preheating my oven to 400°F (200°C). While the oven heats, I grease a 12-cup muffin pan so the corn muffins release easily after baking.

Mix the Corn Muffin Batter:

In a large mixing bowl, I combine the cornmeal, all-purpose flour, granulated sugar, and baking powder. I stir the dry ingredients until evenly distributed.

Next, I add the buttermilk, egg, and melted butter. I gently mix everything until just combined, being careful not to overmix because I want my corn muffins to remain soft and tender.

Bake the Corn Muffins:

I divide the batter evenly among the prepared muffin cups and place the pan in the preheated oven.

I bake the muffins for 15 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Once baked, I let them cool slightly before serving.

Boil the Potatoes:

While the muffins bake, I place the peeled and chopped russet potatoes into a large pot and cover them with water.

I bring the water to a boil and cook the potatoes for approximately 15 to 20 minutes, until they are completely fork-tender. I then drain them thoroughly to prevent excess water from making the mashed potatoes runny.

Make the Creamy Mashed Potatoes:

I mash the drained potatoes until smooth, then add the butter and warmed heavy cream.

I season everything with Chef Bae All Purpose Seasoning and black pepper, mixing until the potatoes become creamy and fluffy. I avoid excessive mixing because it can make the potatoes gummy.

Once finished, I cover the pot and keep the mashed potatoes warm.

Cook the Green Beans:

I bring a separate pot of water to a boil and add the trimmed green beans.

I cook them for approximately 5 to 7 minutes, until tender-crisp. After draining them well, I toss the green beans with butter, Chef Bae All Purpose Seasoning, and black pepper.

I keep them warm until the salmon is ready.

Season and Sear the Salmon:

I pat the salmon fillets dry with paper towels to help them develop a nice seared surface.

I season both sides with Chef Bae All Purpose Seasoning and black pepper.

Next, I heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, I add the salmon fillets and cook them for about 4 to 5 minutes on the first side.

I carefully flip the fillets and continue cooking for another 3 to 5 minutes, depending on their thickness. I check that the thickest part reaches 145°F (63°C) for food safety, then transfer the salmon to a plate.

Prepare the Honey Garlic Glaze:

I reduce the skillet heat to medium and add the butter, brown sugar, honey, soy sauce, Dijon mustard, and minced garlic.

I stir the ingredients together until the butter melts and the sugar dissolves.

I allow the mixture to simmer gently for approximately 2 to 3 minutes, stirring frequently until it becomes glossy and slightly thickened. I watch the heat carefully because the honey and sugar can burn if the skillet gets too hot.

Coat the Salmon with Glaze:

I return the cooked salmon fillets to the skillet and spoon the warm honey garlic glaze generously over each piece.

I let the salmon warm briefly in the sauce, making sure each fillet is evenly coated without overcooking it.

Finally, I sprinkle a little dried parsley over the salmon for a simple finishing touch.

Assemble and Serve:

I place one glazed salmon fillet onto each dinner plate and add a generous serving of creamy mashed potatoes and buttery green beans.

I finish each plate with warm homemade corn muffins and drizzle any remaining glaze over the salmon.

I love serving this meal immediately while the salmon is tender, the potatoes are fluffy, and the muffins are still warm.

Variations

Spicy Honey Garlic Salmon:

When I want a little heat, I add red pepper flakes, cayenne pepper, or a small amount of hot sauce to the glaze. I love how the spicy flavor balances the sweetness of the honey and brown sugar.

Lemon Garlic Glazed Salmon:

For a brighter flavor, I add a squeeze of fresh lemon juice to the glaze just before serving. I sometimes garnish the salmon with lemon slices for an extra touch of freshness.

Garlic Parmesan Mashed Potatoes:

I occasionally mix roasted garlic and freshly grated Parmesan cheese into the mashed potatoes. This variation gives the potatoes a deeper savory flavor and makes them even more comforting.

Southern-Style Green Beans:

When I want a more traditional Southern-inspired side, I sauté diced onions with a little garlic before adding the cooked green beans. I can also include cooked, crumbled bacon for a smoky flavor.

Cheddar Corn Muffins:

I like adding shredded cheddar cheese to the corn muffin batter for a savory variation. The melted cheese pairs especially well with the sweet salmon glaze.

Maple Glazed Salmon:

If I want a slightly different sweetness, I replace the honey with maple syrup. I find that maple syrup gives the glaze a warm, caramel-like flavor that complements the garlic and Dijon mustard.

Storage and Reheating

Storing Leftovers in the Refrigerator:

I allow the leftovers to cool slightly before transferring them into separate airtight containers. I refrigerate everything promptly, within two hours of cooking.

For the best quality and safe storage, I follow these guidelines:

Glazed salmon: I refrigerate it for up to 3 to 4 days.

Mashed potatoes: I store them for up to 3 to 4 days.

Green beans: I keep them refrigerated for up to 3 to 4 days.

Corn muffins: I store them in an airtight container for up to 3 to 4 days in the refrigerator.

I prefer storing the salmon separately from the side dishes to preserve its texture and prevent the glaze from soaking into the other foods.

Freezing:

I can freeze cooked salmon in an airtight freezer-safe container for about 2 to 3 months for the best quality.

I also freeze leftover corn muffins individually wrapped so I can reheat them whenever I want a quick side dish.

Mashed potatoes can be frozen, although I find that their texture sometimes changes after thawing. The butter and cream help them stay smoother when reheated.

I generally prefer enjoying the green beans fresh because freezing cooked green beans can make them softer.

Reheating the Salmon:

I reheat the salmon gently in a covered oven-safe dish at 275°F (135°C), adding a small splash of water or extra glaze to prevent drying.

I heat it until the center reaches 165°F (74°C). I avoid using excessively high heat because it can make the salmon tough.

Reheating the Mashed Potatoes:

I place the mashed potatoes in a saucepan over low heat and stir in a splash of milk or cream.

I stir occasionally until they are hot throughout, reaching 165°F (74°C) for leftovers. I sometimes add a small amount of butter to restore their creamy texture.

Reheating the Green Beans:

I warm the green beans in a skillet over medium-low heat with a little butter, stirring until thoroughly heated.

Reheating the Corn Muffins:

I wrap the corn muffins loosely in foil and warm them in a 300°F (150°C) oven for approximately 8 to 10 minutes, or until heated through.

I like brushing the tops with a little melted butter before serving.

FAQs

Can I use frozen salmon for this recipe?

Yes, I can use frozen salmon fillets as long as I thaw them completely before cooking. I prefer thawing them overnight in the refrigerator, then patting them dry before seasoning. This helps me achieve better browning and allows the glaze to coat the fish evenly.

How do I keep the salmon from drying out?

I avoid overcooking the salmon and pay attention to the thickness of each fillet. I use a meat thermometer to check for an internal temperature of 145°F (63°C). I also prefer searing the salmon first and adding the glaze near the end so the sugars do not burn during cooking.

Can I make the corn muffins ahead of time?

Yes, I often prepare the corn muffins in advance when planning a busy dinner. I bake them, let them cool completely, and store them in an airtight container. Before serving, I warm them in the oven for a few minutes to restore their soft texture and freshly baked flavor.

What can I use instead of heavy cream in the mashed potatoes?

When I do not have heavy cream available, I use whole milk or half-and-half as a substitute. I warm the liquid before mixing it into the potatoes and add it gradually until I reach my preferred consistency. I find that whole milk creates a lighter version, while half-and-half keeps the potatoes richer.

Can I prepare this entire dinner ahead of time?

I can prepare several components ahead of time to make dinner easier. I bake the corn muffins in advance, peel and cut the potatoes shortly before cooking, and trim the green beans ahead of time. I can also mix the glaze ingredients together and refrigerate them until needed. However, I prefer cooking the salmon fresh because it tastes best when served immediately after glazing.

Conclusion

Glazed Salmon with Creamy Mashed Potatoes, Buttery Green Beans & Corn Muffins is a meal I love making whenever I crave something hearty, flavorful, and comforting. The sweet and savory honey garlic salmon brings a delicious richness to the plate, while the creamy potatoes, buttery vegetables, and golden corn muffins create a satisfying balance.

I especially appreciate how this recipe transforms simple ingredients into a complete homemade dinner that feels special without requiring complicated preparation. From the glossy salmon glaze to the soft, buttery corn muffins, every component contributes something delicious.

Whether I'm planning a cozy weeknight dinner, preparing a Sunday family meal, or serving guests, I know this Southern-inspired combination makes a wonderful centerpiece for the table. It's the kind of comforting homemade dinner I enjoy returning to again and again.
