Buckeye Pie

Buckeye Pie is one of my favorite desserts to make when I crave the irresistible combination of chocolate and peanut butter. Inspired by classic Buckeye candies, this indulgent pie features a crunchy chocolate cookie crust, a thick and silky peanut butter filling, and a smooth, glossy chocolate ganache topping.

I love how this recipe delivers all the flavor of homemade peanut butter cups in a creamy, sliceable pie. With just a few simple ingredients and minimal baking, I can prepare an impressive dessert that's perfect for holidays, birthday celebrations, family gatherings, or a weekend treat. The hardest part is waiting for the pie to chill before enjoying that first delicious slice!

Buckeye Pie

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

For the Chocolate Cookie Crust:

26 chocolate creme cookies, crushed into fine crumbs

5 tablespoons unsalted butter, melted

For the Peanut Butter Filling:

8 ounces cream cheese, softened to room temperature

1¾ cups creamy peanut butter

2 cups powdered sugar

1½ teaspoons vanilla extract

⅓ cup plus 1 tablespoon heavy cream

For the Chocolate Ganache Topping:

3 ounces semi-sweet chocolate baking bar, broken into small pieces

3 tablespoons heavy cream

½ teaspoon vanilla extract

Directions

Prepare the Oven and Pie Dish:

I start by preheating my oven to 350°F (175°C). Then, I prepare a 9-inch pie dish and set it aside while making the chocolate cookie crust.

Make the Chocolate Cookie Crust:

In a medium mixing bowl, I combine the finely crushed chocolate creme cookies with 5 tablespoons of melted unsalted butter.

I stir the mixture thoroughly until every cookie crumb is evenly coated with butter. The mixture should resemble damp sand and hold together when pressed.

Press and Bake the Crust:

I transfer the cookie mixture into my prepared pie dish and firmly press it across the bottom and up the sides.

I like using the bottom of a measuring cup to create an even, compact crust.

Next, I bake the crust for 10 minutes. Once baked, I remove it from the oven and let it cool completely before adding the filling. This cooling step is important because a warm crust can soften the peanut butter mixture.

Beat the Cream Cheese:

In a large mixing bowl, I add the softened cream cheese and beat it with an electric mixer on medium-high speed for about 30 seconds to 1 minute.

I continue mixing until the cream cheese becomes completely smooth and creamy.

Add the Peanut Butter:

I add 1¾ cups of creamy peanut butter to the cream cheese and beat the mixture for another 1 to 2 minutes.

I make sure both ingredients are thoroughly combined, creating a thick, smooth peanut butter base.

Incorporate the Powdered Sugar:

I gradually add the powdered sugar, one cup at a time, mixing on medium speed after each addition.

I prefer adding the sugar gradually because it helps prevent lumps and makes the filling easier to mix.

Once all the powdered sugar is incorporated, the mixture should be thick, creamy, and evenly blended.

Finish the Peanut Butter Filling:

I add 1½ teaspoons of vanilla extract along with ⅓ cup plus 1 tablespoon of heavy cream.

Then, I beat the mixture on high speed for 1 to 2 minutes until the filling becomes lighter, smoother, and creamier.

I occasionally scrape down the sides of the bowl to ensure everything mixes evenly.

Fill the Chocolate Crust:

Once the chocolate cookie crust has cooled completely, I spoon the peanut butter filling into it.

Using an offset spatula or the back of a spoon, I spread the filling into an even layer and smooth the surface.

I take a little extra time with this step because a smooth surface makes the ganache topping easier to spread.

Prepare the Chocolate Ganache:

In a microwave-safe bowl, I combine the semi-sweet chocolate pieces, the remaining 3 tablespoons of heavy cream, and ½ teaspoon of vanilla extract.

I microwave the mixture on high for 30 seconds, then whisk until the chocolate melts and the ganache becomes smooth and glossy.

If small pieces of chocolate remain, I heat the mixture in additional short bursts, stirring between each one to avoid overheating.

Add the Ganache Topping:

I spoon the chocolate ganache into the center of the peanut butter filling.

Then, I gently spread it into a circle, leaving approximately a 1 to 1½-inch border of peanut butter filling visible around the edge.

I love this finishing touch because it gives the pie the recognizable appearance of traditional Buckeye candies.

Chill Until Set:

I carefully transfer the assembled pie to the refrigerator and let it chill for at least 6 hours.

Whenever possible, I prefer refrigerating it overnight because the filling becomes firmer and easier to slice.

Slice and Serve:

Once the pie is completely chilled and set, I remove it from the refrigerator and slice it with a sharp knife.

For cleaner slices, I dip the knife into warm water and wipe it dry between cuts.

I serve Buckeye Pie cold to enjoy its creamy texture, rich peanut butter flavor, and decadent chocolate topping.

Variations

One of my favorite things about Buckeye Pie is how easy it is to customize. I can make small adjustments to the crust, filling, or topping while keeping the classic chocolate and peanut butter combination.

Extra Chocolate Buckeye Pie:

When I want an even richer chocolate dessert, I add a handful of mini chocolate chips to the peanut butter filling. I also like sprinkling chocolate shavings over the ganache for extra texture.

Crunchy Peanut Butter Buckeye Pie:

For a little extra crunch, I replace part of the creamy peanut butter with crunchy peanut butter.

I enjoy the contrast between the smooth filling and the small pieces of peanuts.

Oreo Buckeye Pie:

I often use Oreo cookies for the chocolate crust because their dark chocolate flavor pairs beautifully with peanut butter.

I crush the whole cookies, including the cream filling, to create a flavorful crust that holds together nicely.

Milk Chocolate Ganache:

When I prefer a sweeter topping, I substitute milk chocolate for semi-sweet chocolate.

I find that milk chocolate creates a softer, sweeter flavor, although the finished pie becomes slightly more indulgent.

Mini Buckeye Pies:

For parties or individual desserts, I divide the crust mixture and peanut butter filling among small tart pans or dessert cups.

I adjust the crust baking time when using smaller pans and chill the individual pies until firm.

These mini versions are especially convenient when I want to serve dessert without slicing a large pie.

Peanut Butter Cup Topping:

I sometimes decorate the finished pie with chopped peanut butter cups.

I scatter the pieces around the edge or over the chocolate ganache just before serving for an extra-special presentation.

Storage/Reheating

How I Store Buckeye Pie in the Refrigerator

I always keep Buckeye Pie refrigerated because the filling contains cream cheese and heavy cream.

After serving, I cover the pie tightly with plastic wrap or place individual slices in an airtight container.

I store it in the refrigerator for up to 4 days, keeping it chilled until ready to serve.

Can I Freeze Buckeye Pie?

Yes! I can freeze Buckeye Pie when I want to prepare it well in advance.

First, I chill the pie until completely firm. Then, I wrap it tightly in plastic wrap followed by aluminum foil to protect it from freezer burn.

I recommend freezing it for up to 2 months for the best flavor and texture.

When I am ready to serve it, I transfer the frozen pie to the refrigerator and allow it to thaw overnight.

Does Buckeye Pie Need Reheating?

No, I never reheat Buckeye Pie.

This dessert is designed to be served cold, and heating it would soften the peanut butter filling and melt the chocolate ganache.

I prefer taking the pie out of the refrigerator just before slicing and serving.

Tips for Keeping Buckeye Pie Fresh

I avoid leaving the pie at room temperature for extended periods, especially during warm weather.

I also make sure to cover it properly so the filling doesn't absorb odors from other foods in the refrigerator.

For the best presentation, I wait until serving time to add any optional chocolate shavings, chopped peanuts, or candy decorations.

FAQs

Can I Make Buckeye Pie Ahead of Time?

Absolutely! I actually prefer making Buckeye Pie a day ahead because the extra chilling time helps the filling become firmer and easier to slice.

I usually prepare it the evening before a gathering, cover it carefully, and refrigerate it overnight.

The next day, I simply remove it from the refrigerator, slice it, and serve.

Can I Use Natural Peanut Butter for Buckeye Pie?

I prefer using regular creamy peanut butter because it has a consistent texture and blends smoothly with the cream cheese and powdered sugar.

Natural peanut butter can separate and sometimes produces a softer or slightly oily filling.

If I use natural peanut butter, I make sure it is thoroughly stirred and has a thick, stable consistency.

Why Is My Buckeye Pie Filling Too Soft?

When my peanut butter filling seems too soft, the most common reason is insufficient chilling time.

I always refrigerate the pie for at least 6 hours, although overnight chilling gives me the best results.

I also make sure to measure the heavy cream carefully and avoid adding more than the recipe requires.

Can I Make Buckeye Pie Without Baking the Crust?

Yes, I can make a no-bake version by pressing the chocolate cookie crust firmly into the pie dish and refrigerating it until firm instead of baking it.

However, I prefer baking the crust for 10 minutes because it creates a sturdier base that holds together better when sliced.

For a no-bake version, I allow the crust to chill for at least 30 minutes before adding the peanut butter filling.

How Do I Get Clean Slices of Buckeye Pie?

I get the cleanest slices when the pie is thoroughly chilled.

Before cutting, I dip a sharp knife into warm water, wipe it dry, and make a smooth cut through the filling and crust.

I repeat this process between slices to prevent the peanut butter filling and chocolate ganache from sticking to the knife.

I also avoid pressing too hard on the crust because it can crumble if I use too much force.

Conclusion

Buckeye Pie is one of those desserts I love making whenever I want something rich, creamy, and full of chocolate-peanut butter flavor. From the crunchy chocolate cookie crust to the smooth peanut butter filling and glossy chocolate ganache, every layer adds something special.

I especially appreciate how simple this recipe is to prepare. With just 20 minutes of prep time, a quick bake for the crust, and a few hours of refrigeration, I can create a beautiful homemade dessert without spending the entire day in the kitchen.

Whether I'm preparing a holiday dessert table, celebrating a special occasion, or simply satisfying a peanut butter craving, this Buckeye Pie is always a delicious choice. I love serving it chilled with a cup of coffee or a cold glass of milk, and it's even better when made the night before.

For me, the combination of creamy peanut butter, rich chocolate, and a crisp cookie crust makes this Buckeye Pie a dessert worth making again and again.

Notes

Make Ahead: Prepare the pie a day in advance and refrigerate overnight for the firmest filling and cleanest slices.

Peanut Butter: Regular creamy peanut butter provides the smoothest and most stable filling. Natural peanut butter may produce a softer or oily texture unless thoroughly stirred.

Extra Chocolate Variation: Add mini chocolate chips to the peanut butter filling or sprinkle chocolate shavings over the ganache.

Crunchy Variation: Replace some of the creamy peanut butter with crunchy peanut butter for additional texture.

Cookie Crust: Oreo cookies work well for the crust. Crush the whole cookies, including their cream filling.

Milk Chocolate Variation: Substitute milk chocolate for semi-sweet chocolate to create a sweeter ganache.

Mini Pies: Divide the crust and filling among small tart pans or dessert cups. Adjust the baking time for smaller crusts and refrigerate until firm.

Optional Toppings: Garnish with chopped peanut butter cups, chocolate shavings, or chopped peanuts just before serving.

No-Bake Option: Skip baking the crust and refrigerate the firmly pressed cookie mixture for at least 30 minutes before adding the filling.

Chilling: Refrigerate for at least 6 hours. Insufficient chilling can result in a filling that is too soft to slice neatly.

Clean Slices: Use a sharp knife warmed in hot water and wiped dry between cuts.

Refrigerator Storage: Cover tightly with plastic wrap or store individual slices in an airtight container in the refrigerator for up to 4 days.

Freezer Storage: Chill until firm, wrap tightly in plastic wrap followed by aluminum foil, and freeze for up to 2 months. Thaw overnight in the refrigerator before serving.

Serving: Serve cold directly from the refrigerator. Do not reheat, as the filling and ganache will soften.

Portions: Makes 10 generous slices or approximately 12 smaller servings.
