Description

This Crock Pot Angel Chicken is a creamy and comforting slow cooker dinner featuring tender chicken breasts in a rich garlic Italian-style sauce served over delicate angel hair pasta. It is an easy family-friendly meal perfect for busy weeknights or cozy dinners.

Ingredients

1 1/2 pounds boneless skinless chicken breasts

1 tablespoon olive oil

Salt and black pepper to taste

4 ounces cream cheese, softened

3 tablespoons unsalted butter, softened

1 can cream of chicken soup

3 cloves garlic, minced

3/4 cup chicken broth

1 packet dry Italian dressing mix

16 ounces angel hair pasta

Fresh parsley for garnish

Grated Parmesan cheese for serving

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2 to 3 minutes per side until lightly golden.
  3. In a mixing bowl, whisk together the softened cream cheese and butter until smooth.
  4. Stir in the cream of chicken soup, minced garlic, chicken broth, and dry Italian dressing mix until fully combined.
  5. Place the chicken into the slow cooker and pour the creamy sauce over the top.
  6. Cover and cook on low for 3 to 4 hours until the chicken is tender and fully cooked.
  7. Near the end of cooking, prepare the angel hair pasta according to the package directions and drain well.
  8. Serve the creamy chicken and sauce over the pasta.
  9. Garnish with fresh parsley and grated Parmesan cheese before serving.

Notes

Chicken thighs can be used instead of chicken breasts for a juicier texture.

Add mushrooms or spinach to the slow cooker for extra flavor and texture.

Fettuccine or linguine can replace angel hair pasta for a heartier dish.

Add a pinch of red pepper flakes for extra heat.

Mix shredded mozzarella into the sauce for an extra cheesy finish.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freeze the chicken and sauce without pasta for up to 2 months.

Add a splash of chicken broth or milk when reheating if the sauce becomes too thick.
