There’s nothing quite like coming home to the comforting aroma of a Crock Pot Pot Roast slowly cooking to perfection. This classic family dinner is one of my favorite meals to prepare when I want something hearty, satisfying, and packed with homemade flavor. With fall-apart tender chuck roast, buttery potatoes, sweet carrots, and a rich, savory gravy, every bite feels like pure comfort food.

I especially love how the slow cooker does most of the work. After a little preparation and searing, I simply add everything to the Crock Pot and let it cook until the beef becomes incredibly tender. Whether I’m preparing a cozy Sunday dinner, feeding a hungry family, or making meals ahead of time, this slow cooker pot roast never disappoints.

Crock Pot Pot Roast

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

For the Pot Roast

3–4 pound chuck roast, fat trimmed

3 tablespoons olive oil

1 yellow onion, cut into ½-inch slices

6 cloves garlic, smashed

2 tablespoons tomato paste

2 teaspoons brown sugar

2 teaspoons Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

2 teaspoons Worcestershire sauce

32 ounces beef stock

2 pounds carrots, peeled and cut into 2–3-inch pieces

2 pounds baby gold potatoes, halved if large

4 sprigs fresh thyme

4 sprigs fresh rosemary

2 bay leaves

Kosher salt, to taste

Freshly cracked black pepper, to taste

Fresh chopped parsley, for garnish

For the Gravy (Optional):

3 tablespoons cornstarch

3 tablespoons cold water, or as needed to make a smooth slurry

Additional salt and black pepper, to taste

Directions

Prepare and Season the Chuck Roast:

I start by patting the chuck roast dry with paper towels. Removing excess moisture helps create a beautiful golden-brown crust during searing.

Next, I generously season every side of the roast with kosher salt and freshly cracked black pepper. I make sure to season the edges as well so that the entire roast develops a delicious flavor.

Sear the Roast:

I heat 3 tablespoons of olive oil in a large sauté pan over medium-high heat.

Once the oil is hot, I carefully place the seasoned chuck roast into the pan and sear it for approximately 4–5 minutes per side, including the edges.

I look for a deep golden-brown crust before turning the meat. This step adds rich, savory flavor that makes the finished pot roast even more delicious.

Once browned, I transfer the roast directly into my slow cooker.

Sauté the Onions and Garlic:

Without wiping out the pan, I reduce the heat to medium.

I add the sliced yellow onion along with a couple of pinches of salt and black pepper. I cook the onion for approximately 4 minutes, stirring occasionally, until it begins to soften.

Next, I stir in the smashed garlic, tomato paste, brown sugar, Italian seasoning, garlic powder, onion powder, and chili powder.

I cook everything for another minute, allowing the garlic and spices to become fragrant.

Deglaze the Pan:

I pour in the Worcestershire sauce along with a few splashes of beef stock.

Using a wooden spoon, I scrape the browned bits from the bottom of the pan. These flavorful bits add incredible depth to the finished dish.

I stir everything together until the tomato paste is incorporated into the liquid.

Assemble the Crock Pot:

I pour the sautéed onion mixture over the chuck roast in the slow cooker.

Next, I arrange the carrots and baby gold potatoes around the meat.

I pour in the remaining beef stock and season the vegetables with additional salt and black pepper.

Finally, I nestle the fresh thyme, rosemary, and bay leaves among the vegetables.

I make sure the lid fits securely before starting the cooking process.

Slow Cook Until Tender:

I cover the Crock Pot and choose one of the following cooking methods:

Low setting: 8–10 hours

High setting: 5–6 hours

I prefer cooking the roast on Low whenever I have enough time because the longer, gentler cooking process helps produce exceptionally tender beef.

The roast is ready when I can easily pull it apart with a fork. If the meat still feels firm, I allow it to cook a little longer.

Make the Homemade Gravy:

Once the roast is tender, I carefully remove the meat and vegetables from the slow cooker and keep them warm.

I strain the cooking liquid into a saucepan, removing the herb stems and bay leaves.

In a small bowl, I whisk together 3 tablespoons of cornstarch and 3 tablespoons of cold water until smooth.

I place the saucepan over medium heat and gradually whisk in the cornstarch slurry.

I bring the mixture to a gentle simmer, stirring frequently until the gravy thickens to my preferred consistency.

I taste the gravy and adjust the salt and black pepper as needed.

Garnish and Serve:

I transfer the tender chuck roast to a large serving platter and arrange the carrots and potatoes around it.

I spoon the rich homemade gravy over the beef and vegetables, then finish everything with freshly chopped parsley.

I love serving this Crock Pot Pot Roast while it's hot, with extra gravy on the side.

Variations

One of the things I enjoy most about this Crock Pot Pot Roast is how easily I can customize it with different ingredients and flavors.

Red Wine Pot Roast:

For a deeper, more complex flavor, I replace 1 cup of the beef stock with dry red wine. I add the wine while deglazing the pan and let it simmer briefly before transferring everything to the slow cooker.

Mushroom Pot Roast:

When I want an even heartier dish, I add 8–12 ounces of sliced cremini mushrooms to the slow cooker. The mushrooms absorb the savory cooking liquid and add an earthy flavor that pairs beautifully with the beef.

Extra Garlic and Herb Pot Roast:

I sometimes add a few extra smashed garlic cloves along with additional rosemary and thyme. This creates a wonderfully aromatic roast with a stronger herb flavor.

Spicy Crock Pot Pot Roast:

For a little heat, I add ½ teaspoon of crushed red pepper flakes or a pinch of cayenne pepper. I find that a small amount of spice complements the rich beef without overpowering the other ingredients.

Low-Carb Pot Roast:

When I want a lower-carbohydrate version, I replace the potatoes with cauliflower florets, radishes, or turnips. I add cauliflower toward the end of cooking to prevent it from becoming too soft.

Extra-Rich Gravy:

For a creamier gravy, I sometimes whisk in a tablespoon of butter after the gravy has thickened. This gives it a silky texture and adds another layer of richness.

Storage/Reheating

I love making a large batch of Crock Pot Pot Roast because the leftovers are incredibly convenient for quick lunches and dinners.

How I Store Leftovers:

I allow the roast and vegetables to cool slightly before transferring them into airtight containers.

I store the beef with some of its cooking liquid or gravy to help prevent it from drying out.

Refrigerator: I keep leftovers refrigerated for up to 3–4 days.

Freezer: I freeze portions of beef with gravy for up to 3 months for best quality.

I refrigerate leftovers within 2 hours of cooking and use shallow containers to help them cool quickly.

How I Reheat Crock Pot Pot Roast:

On the stovetop: I place the beef, vegetables, and gravy in a covered saucepan over medium-low heat. I add a splash of beef stock if needed and heat gently until everything is hot.

In the microwave: I transfer a portion to a microwave-safe dish, cover it loosely, and reheat in short intervals, stirring or turning the food between intervals.

In the oven: I place the leftovers in an oven-safe dish with a little gravy, cover tightly with foil, and warm at 325°F (163°C) until heated through.

I make sure leftovers reach 165°F (74°C) when reheating.

How I Freeze and Thaw:

I prefer freezing the shredded beef and gravy together in freezer-safe containers.

When I'm ready to serve it again, I thaw the roast overnight in the refrigerator and reheat it gently.

Although I can freeze the potatoes and carrots, I find that potatoes sometimes become softer or grainier after thawing.

FAQs

What is the best cut of beef for Crock Pot Pot Roast?

I always prefer chuck roast for this recipe. Its generous marbling and connective tissue gradually break down during slow cooking, creating tender, flavorful meat.

I can also use beef brisket or bottom round roast, although I find that chuck roast usually gives me the juiciest and most shreddable results.

Do I need to sear the roast before putting it in the Crock Pot?

I strongly recommend searing the roast before slow cooking. Although I can skip this step when I'm short on time, browning the meat creates a richer flavor and a more appealing appearance.

I also love how the browned bits left in the pan enhance the homemade gravy.

Why is my Crock Pot Pot Roast still tough?

When my pot roast is still tough, it usually needs more cooking time.

Chuck roast contains connective tissue that requires several hours of gentle heat to soften properly. I continue cooking until the meat separates easily with a fork.

I also avoid repeatedly lifting the slow cooker lid because this releases heat and can extend the cooking time.

Can I make Crock Pot Pot Roast ahead of time?

Yes, I often prepare this recipe ahead of time because it reheats beautifully.

I cook the roast, allow it to cool safely, and refrigerate it with the gravy. When I'm ready to serve, I reheat everything gently until thoroughly hot.

I sometimes find that the flavors become even more delicious after the beef has rested in the savory cooking liquid overnight.

How do I thicken Crock Pot Pot Roast gravy?

I like using a simple cornstarch slurry to thicken the cooking liquid.

I whisk 3 tablespoons of cornstarch with 3 tablespoons of cold water, then gradually stir the mixture into the hot cooking liquid.

I allow the gravy to simmer for a few minutes until it reaches the consistency I like.

If I want a thinner gravy, I add a little more beef stock. For a thicker consistency, I prepare a small amount of additional slurry and add it gradually.

Conclusion

This Crock Pot Pot Roast is one of my favorite comfort food recipes because it combines tender, juicy beef with flavorful vegetables and a rich homemade gravy. I love how a few simple ingredients transform into such a satisfying meal with very little hands-on effort.

Whether I'm planning a family Sunday dinner, preparing meals for the week, or craving a warm homemade dish on a chilly evening, this slow cooker pot roast is always a wonderful choice.

I especially enjoy serving it with crusty bread, warm dinner rolls, or a simple green salad to complete the meal. The tender beef, soft potatoes, sweet carrots, and savory gravy make every serving delicious.

For me, this recipe is a reminder that some of the best homemade meals are also the simplest. With a little preparation and plenty of slow cooking, I can create a comforting, flavorful dinner that brings everyone around the table.

Ingredients

3–4 pound chuck roast, fat trimmed

3 tablespoons olive oil

1 yellow onion, cut into ½-inch slices

6 cloves garlic, smashed

2 tablespoons tomato paste

2 teaspoons brown sugar

2 teaspoons Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

2 teaspoons Worcestershire sauce

32 ounces beef stock

2 pounds carrots, peeled and cut into 2–3-inch pieces

2 pounds baby gold potatoes, halved if large

4 sprigs fresh rosemary

2 bay leaves

Kosher salt, to taste

Freshly cracked black pepper, to taste

Fresh chopped parsley, for garnish

3 tablespoons cornstarch, for optional gravy

3 tablespoons cold water, or as needed for optional gravy

Additional salt and black pepper, to taste, for optional gravy

Instructions

  1. Pat the chuck roast dry with paper towels to remove excess moisture. Generously season all sides and edges with kosher salt and freshly cracked black pepper.
  2. Heat 3 tablespoons of olive oil in a large sauté pan over medium-high heat. Add the seasoned chuck roast and sear for approximately 4–5 minutes per side, including the edges, until a deep golden-brown crust forms. Transfer the browned roast to the slow cooker.
  3. Reduce the pan heat to medium without wiping it clean. Add the sliced yellow onion with a couple of pinches of salt and black pepper. Sauté for approximately 4 minutes, stirring occasionally, until softened.
  4. Add the smashed garlic, tomato paste, brown sugar, Italian seasoning, garlic powder, onion powder, and chili powder. Stir and cook for another minute until the garlic and spices become fragrant.
  5. Pour the Worcestershire sauce and a few splashes of beef stock into the pan. Scrape the browned bits from the bottom with a wooden spoon, stirring until the tomato paste is incorporated into the liquid.

  9. For the optional gravy, carefully transfer the cooked roast and vegetables to a serving platter and keep warm. Strain the cooking liquid into a saucepan, discarding the herb stems and bay leaves.
  10. In a small bowl, whisk together 3 tablespoons cornstarch and 3 tablespoons cold water until smooth. Heat the strained cooking liquid over medium heat, gradually whisk in the slurry, and bring to a gentle simmer. Stir frequently until the gravy reaches the desired thickness. Adjust salt and black pepper to taste.
  11. Arrange the tender chuck roast, carrots, and potatoes on a large serving platter. Spoon the homemade gravy over the beef and vegetables, garnish with freshly chopped parsley, and serve hot with extra gravy on the side.

Notes

Choose a well-marbled chuck roast for the juiciest, most tender results. Beef brisket or bottom round roast can also be used.

Searing the roast before slow cooking develops a richer, deeper flavor, although this step can be skipped when short on time.

Cooking on Low for 8–10 hours produces exceptionally tender beef. Avoid repeatedly lifting the slow cooker lid because heat loss can extend cooking time.

For a red wine variation, replace 1 cup of beef stock with dry red wine and simmer briefly while deglazing the pan.

For mushroom pot roast, add 8–12 ounces of sliced cremini mushrooms to the slow cooker.

For extra garlic and herb flavor, add additional smashed garlic cloves, fresh rosemary, and thyme.

For a spicy variation, add ½ teaspoon crushed red pepper flakes or a pinch of cayenne pepper.

For a lower-carbohydrate variation, replace the potatoes with cauliflower florets, radishes, or turnips. Add cauliflower toward the end of cooking to prevent overcooking.

For an extra-rich gravy, whisk in 1 tablespoon of butter after thickening.

If the gravy is too thick, add additional beef stock. If too thin, gradually add a little more cornstarch slurry and simmer until thickened.

Store leftovers in airtight containers with some cooking liquid or gravy to keep the beef moist. Refrigerate within 2 hours of cooking and consume within 3–4 days.

Freeze portions of beef with gravy in freezer-safe containers for up to 3 months for best quality. Potatoes may become softer or grainier after freezing.

Thaw frozen portions overnight in the refrigerator before reheating.

Reheat gently in a covered saucepan over medium-low heat with a splash of beef stock, or use a microwave-safe covered dish in short intervals.

For oven reheating, cover the leftovers with foil and warm at 325°F (163°C) until heated through. Reheat leftovers to an internal temperature of 165°F (74°C).

Serve with crusty bread, warm dinner rolls, or a simple green salad for a complete family meal.

Cooking time varies with roast size and slow cooker performance. The listed timing is an estimate based on the High setting; cooking on Low requires approximately 8–10 hours in the slow cooker.
