Description

Fresh, juicy tomatoes are marinated in a flavorful blend of garlic, herbs, olive oil, balsamic vinegar, and honey for a light and refreshing appetizer or side dish. This simple no-cook recipe delivers vibrant flavor with every bite.


Ingredients

4 large ripe tomatoes, firm to the touch

2 garlic cloves, pressed

1/4 small white onion, finely diced

1/2 small bunch fresh dill, basil, parsley, or cilantro, chopped

1/4 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Kosher salt, to taste

Ground black pepper, to taste


Instructions

  1. Slice the tomatoes into 1/3-inch thick slices.
  2. Finely chop the garlic, onion, and fresh herbs.
  3. In a small bowl, combine the garlic, onion, herbs, olive oil, balsamic vinegar, and honey.
  4. Arrange the tomato slices on a shallow platter and season with kosher salt and black pepper.
  5. Spoon the garlic-herb marinade evenly over the tomatoes.
  6. Cover and refrigerate for at least 1 hour before serving.

Notes

Fresh basil creates an Italian-inspired flavor, while cilantro gives a brighter citrusy taste.

Add sliced mozzarella for a caprese-style variation.
