Ingredients

12 oz orzo pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

2 tablespoons fresh dill, chopped (optional)

For the dressing:

¼ cup extra virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

Juice of ½ lemon

Directions

I start by cooking the orzo pasta according to the package directions until it's al dente. Then I drain it and rinse it under cold water to stop the cooking process.

In a large bowl, I combine the orzo with the halved cherry tomatoes, diced cucumber, chopped red onion, sliced olives, crumbled feta, parsley, and dill.
