Description

Grilled Lemon Herb Chicken is a fresh, flavorful main dish featuring juicy chicken breasts marinated with lemon, garlic, olive oil, and herbs before being grilled to perfection. It's an easy, healthy recipe that's perfect for weeknight dinners, meal prep, or summer cookouts.


Ingredients

1 1/2 lbs boneless skinless chicken breasts

1/4 cup olive oil

Zest of 1 lemon

2 tablespoons fresh chopped oregano

4 garlic cloves, minced

1 1/4 teaspoons kosher salt

1/2 teaspoon black pepper

1/4 teaspoon chili flakes

1 lemon, halved for grilling

Fresh herbs for garnish


Instructions

  1. Pound the chicken breasts to an even thickness.
  2. In a bowl, combine the olive oil, lemon zest, oregano, garlic, kosher salt, black pepper, and chili flakes.
  3. Coat the chicken thoroughly with the marinade and refrigerate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the chicken for 5 to 6 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. Place the lemon halves cut-side down on the grill and cook until lightly charred.
  7. Squeeze the grilled lemon over the cooked chicken, garnish with fresh herbs, and serve warm.

Notes

Marinate the chicken for several hours or overnight for deeper flavor.

Substitute fresh thyme, rosemary, or parsley for the oregano if desired.

Add Dijon mustard or a little honey to the marinade for extra flavor variation.

Boneless chicken thighs can be used instead of chicken breasts.

Top with crumbled feta for a Mediterranean-inspired variation.

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheat gently in a skillet, a 325°F oven, or the microwave to help retain moisture.
