Description
Soft and hearty gluten-free oat muffins filled with juicy cherries and crunchy pistachios. These flourless muffins make a wholesome breakfast, snack, or coffee-time treat.
Ingredients
2 cups rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
1/3 cup honey or maple syrup
1/4 cup plain Greek yogurt
1/4 cup milk of choice
1 teaspoon vanilla extract
2 tablespoons melted coconut oil or unsalted butter
1 cup pitted and chopped fresh cherries
1/2 cup shelled pistachios, roughly chopped
Extra chopped pistachios for topping, optional
Instructions
- Preheat the oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or lightly grease the cups.
- Place the rolled oats in a blender or food processor and blend until they reach a coarse, flour-like consistency.
- Add the baking powder, baking soda, salt, eggs, honey or maple syrup, Greek yogurt, milk, vanilla extract, and melted coconut oil or butter.
- Blend until the batter is smooth and evenly combined, avoiding unnecessary overblending.
- Gently fold the chopped cherries and pistachios into the batter with a spatula.
- Divide the batter evenly among the 12 prepared muffin cups, filling each about three-quarters full.
- Sprinkle additional chopped pistachios over the tops, if desired.
- Bake for 20–24 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack and allow them to cool before serving.
Notes
Use certified gluten-free rolled oats when preparing the muffins for a strictly gluten-free diet.
Frozen pitted cherries can replace fresh cherries; avoid adding excess liquid and allow a little extra baking time if needed.
Almonds, walnuts, or pecans can replace the pistachios, or the nuts can be omitted.
For a dairy-free variation, use plant-based milk, coconut oil, and a thick dairy-free yogurt.
For cherry-almond muffins, replace the pistachios with chopped almonds and optionally add a little almond extract.
For blueberry-pistachio muffins, replace the cherries with blueberries.
For a chocolate-cherry variation, fold in a handful of dark chocolate chips.
For maple-cinnamon muffins, use maple syrup and add 1/2 to 1 teaspoon ground cinnamon.
Store cooled muffins in an airtight container at room temperature for 1–2 days or refrigerate for up to 5 days.
Freeze cooled muffins in a freezer-safe container or bag for up to 3 months.
Reheat a refrigerated muffin in the microwave for about 10–20 seconds, or warm frozen muffins in short intervals until heated through.
