These No-Flour Pistachio Cherry Oat Muffins (Gluten-Free) are one of my favorite ways to turn simple oats into a wholesome homemade treat. Instead of traditional flour, I blend rolled oats into a coarse oat flour, which gives the muffins a soft, hearty texture while keeping them naturally gluten-free when I use certified gluten-free oats.

I love the combination of juicy cherries and crunchy pistachios in every bite. Honey or maple syrup provides just enough sweetness, while Greek yogurt, milk, and a little coconut oil or butter keep the muffins tender and moist. I bake the muffins for 20–24 minutes, until the tops are lightly golden and a toothpick inserted into the center comes out clean or with only a few moist crumbs.

I leave the muffins in the pan for about 5 minutes before transferring them to a wire rack. I let them cool before serving so their texture has time to set.

Storage/Reheating

I let the muffins cool completely before storing them because sealing warm muffins can trap excess moisture.

For short-term storage, I keep the muffins in an airtight container at room temperature for about 1–2 days. Because these muffins contain fresh fruit and yogurt and are quite moist, I prefer refrigerating them when I need to keep them longer.

In the refrigerator, I store them in an airtight container for up to about 5 days. I can eat them chilled, bring them to room temperature, or warm one briefly before serving.

For longer storage, I freeze the completely cooled muffins in a freezer-safe container or bag for up to about 3 months. I like freezing them individually so I can remove only as many as I need.
