Description

Buttery crumble bars layered with juicy peaches and a silky cream-infused filling create a comforting yet elegant dessert. The crisp crumble and tender peach filling make these bars perfect for summer gatherings, holidays, or everyday treats.


Ingredients

2 1/2 cups all-purpose flour

2/3 cup granulated sugar

1/2 teaspoon salt

1 1/4 cups cold unsalted butter, cubed

1/4 cup brown sugar

5 cups peeled and chopped peaches

3/4 cup granulated sugar

1/4 cup all-purpose flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

6 tablespoons heavy cream

1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a large bowl, combine 2 1/2 cups flour, 2/3 cup granulated sugar, and 1/2 teaspoon salt. Cut in the cold butter until coarse crumbs form.
  3. Press about two-thirds of the crumb mixture firmly into the prepared pan to form the crust.
  4. Bake the crust for 15 minutes until lightly set.
  5. Stir the brown sugar into the remaining crumb mixture and set aside for the topping.
  6. In another bowl, combine the peaches, 3/4 cup granulated sugar, 1/4 cup flour, cinnamon, 1/4 teaspoon salt, heavy cream, and vanilla extract until evenly coated.
  7. Spread the peach filling evenly over the warm crust.
  8. Sprinkle the reserved crumble mixture evenly over the filling.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  10. Cool completely, then refrigerate for at least 2 hours before slicing and serving.

Notes

Frozen peaches may be used; thaw and drain well before using.

Peeling the peaches creates a smoother filling, but the skins may be left on if desired.

Add chopped pecans or sliced almonds to the crumble for extra crunch.

Mix in a little lemon zest, nutmeg, or ground ginger for additional flavor.

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.

Serve chilled, slightly warmed, or with vanilla ice cream or whipped cream.
