Ingredients
2 1/2 cups all-purpose flour
2/3 cup granulated sugar
1/2 teaspoon salt
1 1/4 cups cold unsalted butter, cubed
1/4 cup brown sugar
5 cups peeled and chopped peaches
3/4 cup granulated sugar
1/4 cup all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons heavy cream
1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
- In a large bowl, combine 2 1/2 cups flour, 2/3 cup granulated sugar, and 1/2 teaspoon salt. Cut in the cold butter until coarse crumbs form.
- Press about two-thirds of the crumb mixture firmly into the prepared pan to form the crust.
- Bake the crust for 15 minutes until lightly set.
- Stir the brown sugar into the remaining crumb mixture and set aside for the topping.
- In another bowl, combine the peaches, 3/4 cup granulated sugar, 1/4 cup flour, cinnamon, 1/4 teaspoon salt, heavy cream, and vanilla extract until evenly coated.
- Spread the peach filling evenly over the warm crust.
- Sprinkle the reserved crumble mixture evenly over the filling.
- Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Cool completely, then refrigerate for at least 2 hours before slicing and serving.
Notes
Frozen peaches may be used; thaw and drain well before using.
Peeling the peaches creates a smoother filling, but the skins may be left on if desired.
Add chopped pecans or sliced almonds to the crumble for extra crunch.
Mix in a little lemon zest, nutmeg, or ground ginger for additional flavor.
Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Serve chilled, slightly warmed, or with vanilla ice cream or whipped cream.
