Description

Pizza Enchiladas combine the bold, cheesy flavors of pizza with the comforting baked goodness of enchiladas. Filled with seasoned beef, melty cheese, and topped with classic pizza favorites, this easy family dinner is hearty and satisfying.


Ingredients

1 lb lean ground beef

1 cup diced yellow onion

2 cloves garlic, minced

1 cup pizza sauce, divided

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

8 flour tortillas

1 1/2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup sliced pepperoni

1/4 cup sliced black olives

1/4 cup diced green bell pepper

1/4 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is tender.
  3. Stir in the garlic, Italian seasoning, salt, and black pepper, and cook for 1 minute until fragrant.
  4. Mix in 1/2 cup of the pizza sauce and remove the skillet from the heat.
  5. Divide the beef mixture among the tortillas, sprinkle with some mozzarella cheese, roll tightly, and place seam-side down in the prepared baking dish.
  6. Spread the remaining pizza sauce over the tortillas.
  7. Top with the cheddar cheese, remaining mozzarella, pepperoni, black olives, diced green bell pepper, and Parmesan cheese.
  8. Bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly golden.
  9. Garnish with chopped fresh parsley and serve warm.

Notes

Ground turkey, Italian sausage, shredded chicken, or plant-based crumbles can be substituted for the ground beef.

Add mushrooms, spinach, jalapeños, or diced tomatoes for extra flavor and vegetables.

Prepare the enchiladas up to 24 hours ahead and refrigerate before baking.

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheat in a 350°F oven for about 15 minutes or microwave individual servings for 1 to 2 minutes.
