Description
These no-bake Raspberry Cheesecake Jars layer buttery graham cracker crumbs, fluffy cream cheese filling, sweet raspberry sauce, and fresh raspberries. They are an easy make-ahead dessert perfect for parties, summer gatherings, and special occasions.
Ingredients
Graham cracker crumbs
Unsalted butter, melted
Cream cheese, softened
Powdered sugar
Vanilla extract
Heavy whipping cream
Raspberry jam or raspberry sauce
Fresh raspberries
Lemon juice, optional
Pinch of salt
Instructions
- Combine the graham cracker crumbs and melted butter in a bowl until evenly coated and the mixture resembles damp sand. Set aside.
- In a large bowl, beat the softened cream cheese until completely smooth and fluffy.
- Add the powdered sugar, vanilla extract, and salt. Beat until smooth and evenly combined.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the cream cheese mixture without deflating the whipped cream.
- If desired, stir a little lemon juice into the raspberry jam or sauce for a brighter flavor.
- Spoon a layer of graham cracker crumbs into the bottom of each jar, followed by a layer of cheesecake filling and a layer of raspberry jam or sauce.
- Add fresh raspberries between the layers or over the raspberry topping.
- Repeat the layers as needed for the size of the jars. Finish with cheesecake filling, raspberry topping, fresh raspberries, and a sprinkle of graham cracker crumbs.
- Cover and refrigerate for at least 2 hours before serving to allow the filling to firm up.
Notes
Use small dessert jars or glass containers holding approximately 4 to 8 ounces.
For strawberry cheesecake jars, replace the raspberry topping and berries with strawberry sauce and fresh sliced strawberries.
For a mixed berry version, use raspberries, blueberries, strawberries, and blackberries.
For chocolate raspberry jars, replace the graham cracker crumbs with crushed chocolate cookies.
For extra lemon flavor, add fresh lemon zest and a little lemon juice to the cheesecake filling.
Crushed vanilla cookies or another crisp cookie can be substituted for the graham crackers.
Store covered in the refrigerator for 3 to 4 days. The jars can be assembled one day ahead; add decorative fresh raspberries shortly before serving for the best appearance.
Serve chilled and do not reheat.
The filling and crumb layers can be frozen without the fresh raspberry garnish and thawed overnight in the refrigerator, although the filling may be slightly softer.
