These Raspberry Cheesecake Jars are one of my favorite ways to enjoy cheesecake without turning on the oven. I layer buttery graham cracker crumbs with a smooth, fluffy cream cheese filling, sweet raspberry sauce, and fresh raspberries. The individual jars make this dessert easy to serve at parties, summer gatherings, holidays, or whenever I want a simple make-ahead treat.

Raspberry Cheesecake Jars

Ingredients

Graham cracker crumbs

Unsalted butter, melted

Cream cheese, softened

Powdered sugar

Vanilla extract

Heavy whipping cream

Raspberry jam or raspberry sauce

Directions

I start by combining the graham cracker crumbs and melted unsalted butter in a bowl. I mix until all the crumbs are evenly coated and have a texture similar to damp sand, then I set the mixture aside.

In a separate large bowl, I beat the softened cream cheese until it becomes completely smooth and fluffy. Starting with softened cream cheese helps me avoid lumps in the filling.

I add the powdered sugar, vanilla extract, and a pinch of salt to the cream cheese. I beat everything together until the mixture is smooth and evenly combined.

In another bowl, I whip the heavy whipping cream until stiff peaks form. I gently fold the whipped cream into the cream cheese mixture, taking care not to deflate it. This gives me a light, creamy cheesecake filling.

If I want a brighter raspberry flavor, I stir a little lemon juice into the raspberry jam or sauce.

To assemble the jars, I spoon a layer of buttery graham cracker crumbs into the bottom of each jar. I follow it with a generous layer of cheesecake filling and then a layer of raspberry jam or sauce.

I add fresh raspberries between or on top of the layers for extra fruit flavor and texture.

Depending on the size of my jars, I repeat the layers until they are filled. I like to finish each jar with cheesecake filling, raspberry topping, fresh raspberries, and a small sprinkle of graham cracker crumbs.

I cover the jars and refrigerate them for at least 2 hours before serving. Chilling gives the filling time to firm up and allows the flavors to come together.
