Description

These soft pumpkin cookies are fluffy, tender, and packed with warm fall spices. Finished with creamy cream cheese frosting, they make a cozy dessert perfect for autumn and holiday gatherings.


Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice

1 large egg

1 teaspoon vanilla extract

1 cup pumpkin puree, blotted dry

2 cups all-purpose flour

1/2 cup unsalted butter, softened (for frosting)

8 ounces cream cheese, softened

3 cups powdered sugar

1 teaspoon vanilla extract (for frosting)


Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Beat 1 cup softened butter and granulated sugar together until light and creamy.
  3. Mix in the baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
  4. Add the egg, vanilla extract, and blotted pumpkin puree. Mix until smooth.
  5. Add the flour and mix until a soft dough forms.
  6. Scoop portions of dough onto the prepared baking sheet.
  7. Bake for 10 to 12 minutes, or until the cookies are set.
  8. Allow the cookies to cool completely.
  9. For the frosting, beat 1/2 cup softened butter and cream cheese until smooth.
  10. Mix in the powdered sugar and vanilla extract until creamy.
  11. Frost the cooled cookies and serve.

Notes

Blot the pumpkin puree before using to prevent excess moisture in the dough.

Add mini chocolate chips to the dough for extra sweetness.

Top frosted cookies with chopped pecans or walnuts for added crunch.

For a stronger spice flavor, add a pinch of nutmeg or extra pumpkin pie spice.
