A decadent dessert combining a fluffy, moist cake with a creamy cheesecake swirl and fresh strawberry flavor, this Strawberry Cheesecake Bundt Cake is perfect for any occasion. Whether you're celebrating a special event or simply craving a delicious treat, this cake offers the best of both worlds – a light, airy cake complemented by a rich and tangy cheesecake layer. The fresh strawberry puree brings a burst of flavor, making every bite irresistible.

Strawberry Cheesecake Bundt Cake

Ingredients

1 box of vanilla cake mix

1 cup water

⅓ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

8 oz cream cheese, softened

¼ cup sugar

1 teaspoon vanilla extract

1 egg

½ cup fresh strawberries, pureed

¼ cup powdered sugar (for dusting)

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

Preheat the oven to 350°F (175°C) and grease a Bundt pan with non-stick spray.

In a large bowl, combine the vanilla cake mix, water, vegetable oil, eggs, and vanilla extract. Mix until smooth and well-combined.

In a separate bowl, beat the softened cream cheese with sugar, vanilla extract, and egg until smooth and creamy.

Gently fold in the pureed strawberries into the cream cheese mixture.

Pour half of the cake batter into the prepared Bundt pan.

Carefully spoon the cheesecake mixture over the cake batter, spreading it evenly.

Pour the remaining cake batter over the cheesecake layer.

Use a butter knife to swirl the two batters together, creating a marbled effect.

Bake for 50-55 minutes, or until a toothpick inserted comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Once cooled, dust the top of the cake with powdered sugar.

Add-ins: You can add chopped strawberries or even a swirl of strawberry jam to the cake batter for extra flavor and texture.

Glaze: For an added sweet touch, drizzle a strawberry glaze or even a cream cheese glaze over the top of the cake.

Flavors: Experiment with other fruit purees like blueberry or raspberry to make your own fruity twist on this recipe.

Storage/Reheating

Storage: I recommend storing any leftover cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.

FAQs

Can I use homemade cake mix instead of a box mix?

Yes, you can use homemade cake mix if you prefer. Just ensure it’s a vanilla flavor with similar ingredients and proportions for best results.

Can I make this cake ahead of time?

Absolutely! This cake stays moist for a few days and actually tastes better the next day as the flavors have time to meld. You can prepare it a day in advance and store it covered.

Can I freeze this cake?

Yes, you can freeze the cake! Just wrap it tightly in plastic wrap and foil before freezing. When you're ready to enjoy it, allow it to thaw in the refrigerator overnight, then let it come to room temperature before serving.

Is it necessary to use fresh strawberries?

While fresh strawberries offer the best flavor and texture, you can also use frozen strawberries that have been thawed and pureed.

Can I make this cake without the cheesecake layer?

If you're not a fan of cheesecake, you can skip the cheesecake mixture and just make a plain vanilla Bundt cake. The cake will still be delicious on its own!

Conclusion

This Strawberry Cheesecake Bundt Cake is a perfect dessert to impress your friends and family. It combines the lightness of cake with the richness of cheesecake and a burst of strawberry flavor that makes every bite feel like a special treat. Whether it’s for a celebration or a simple dessert, I know you’ll love this cake as much as I do!
