This rich and creamy Tahini Fudge with Maple, Vanilla & Walnuts is one of my favorite no-bake treats. It’s naturally sweetened with maple syrup, infused with the warm aroma of vanilla, and finished with a satisfying walnut crunch. The combination of healthy fats, real-food ingredients, and indulgent flavor makes it a perfect little square of joy straight from the freezer.

Tahini Fudge with Maple, Vanilla & Walnuts

Ingredients

½ cup tahini (well-stirred)

¼ cup pure maple syrup

½ teaspoon pure vanilla extract

Pinch of sea salt

¼ cup chopped walnuts

Directions

I line a small loaf pan or container with parchment paper so the fudge lifts out easily.

In a mixing bowl, I stir together the tahini, maple syrup, vanilla extract, and a pinch of sea salt until the mixture is completely smooth.

Then I fold in the chopped walnuts.

I pour the mixture into the prepared pan and use a spatula to smooth the top.

I freeze it for 1 to 2 hours, or until it’s firm to the touch.

Once set, I lift the fudge out using the parchment paper and cut it into small squares.

I always store the pieces in an airtight container in the freezer for the best texture.

This recipe makes about 10 to 12 small squares.

Variations

I sometimes add a pinch of cinnamon or cardamom to give it a warming spice.

A sprinkle of flaky sea salt on top before freezing adds a gourmet touch.

I occasionally swirl in a little almond butter for a two-toned effect.

Storage/Reheating

I always keep this fudge in the freezer—it holds its shape best and keeps for up to 2 months in an airtight container. I let it sit at room temperature for 2–3 minutes before eating so it softens slightly. I don’t recommend storing it at room temperature or in the fridge long-term, as it softens too much.

Can I use honey instead of maple syrup?

Yes, I can substitute honey if I don’t need the recipe to be vegan. It adds a different flavor, but still works well.

This version isn't strictly keto because of the maple syrup, but I can use a keto-friendly syrup alternative to reduce the carbs.

Can I use roasted or raw walnuts?

I’ve used both. Roasted walnuts give a toastier flavor, but raw walnuts work fine too—it’s all about personal preference.
