Description
A quick and fruity Thermomix Apricot Compote made with fresh apricots, sugar, and vanilla sugar. Serve it chunky or silky smooth with yogurt, pancakes, oatmeal, or desserts.
Ingredients
600 g apricots
50 g granulated sugar
1 sachet vanilla sugar
Instructions
- Wash the apricots thoroughly, cut them in half, remove the pits, and cut each apricot into quarters.
- Place the prepared apricots, granulated sugar, and vanilla sugar into the Thermomix bowl.
- Cook for 8 minutes at 100°C on Speed 1.
- For a chunky compote, blend for 5 seconds on Speed 4. For a smoother compote, blend for 15 seconds on Speed 8.
- Transfer the compote to a clean container and allow it to cool completely. Serve immediately or refrigerate until needed.
Notes
Reduce the granulated sugar if the apricots are naturally very ripe and sweet.
Add a small squeeze of fresh lemon juice for extra brightness or a pinch of cinnamon for a warmer flavor.
Vanilla sugar can be replaced with regular sugar and a little vanilla extract.
For an exceptionally smooth compote, peel the apricots before cooking or blend briefly again after the initial blending.
Serve chilled, at room temperature, or gently warmed with yogurt, oatmeal, pancakes, waffles, French toast, ice cream, or other desserts.
Store cooled compote in a clean airtight container in the refrigerator and use within a few days.
For longer storage, freeze in freezer-safe containers with room for expansion and thaw in the refrigerator before serving.
Frozen apricots can be used; thaw and drain excess liquid before cooking and adjust blending as needed.
