This Thermomix Apricot Compote is one of my favorite ways to enjoy fresh apricots when they are sweet, juicy, and in season. I make it with only three simple ingredients, and the Thermomix takes care of almost all the work. I can leave the compote slightly chunky or blend it until silky smooth, depending on how I plan to serve it.

I love spooning this homemade apricot compote over yogurt, pancakes, oatmeal, or ice cream. It also makes a bright and fruity addition to breakfast, brunch, or a simple dessert.

Thermomix Apricot Compote

Ingredients

600 g apricots

50 g granulated sugar

1 sachet vanilla sugar

Fresh, ripe apricots give me the best flavor and natural sweetness. I prefer fruit that is fragrant and slightly soft but not overly ripe or bruised.

Directions

I start by washing the apricots thoroughly. I cut them in half, remove the pits, and then cut each apricot into quarters.

Next, I place the prepared apricots into the Thermomix bowl along with the granulated sugar and vanilla sugar. I cook everything for 8 minutes at 100°C on Speed 1. During this time, the apricots soften and release their juices while the sugars dissolve into the fruit.

Once cooked, I choose the texture I want. For a chunkier apricot compote, I blend for 5 seconds on Speed 4. For a smoother consistency, I blend for 15 seconds on Speed 8.

I transfer the finished compote to a clean container and allow it to cool completely before serving or refrigerating. The compote will thicken slightly as it cools.

Variations

For a less sweet compote, I reduce the amount of granulated sugar, particularly when my apricots are naturally very ripe and sweet.

For a warmer flavor, I sometimes add a small pinch of cinnamon. I can also replace the vanilla sugar with regular sugar and a little vanilla extract if that is what I have available.

I allow the apricot compote to cool completely before transferring it to a clean airtight container. I keep it refrigerated and use it within a few days for the best flavor and freshness.

I usually serve this compote chilled or at room temperature, so reheating is not necessary. When I want it warm for pancakes, oatmeal, or desserts, I gently warm only the portion I need until heated through rather than repeatedly reheating the entire batch.

I can also portion the compote into freezer-safe containers if I want to keep it longer. I leave enough room for expansion, freeze it, and thaw it in the refrigerator before serving.

Do I need to peel the apricots before making compote?

No. I normally leave the apricot skins on because they soften during cooking and blend easily in the Thermomix. Leaving them on also saves preparation time. If I specifically want an exceptionally smooth and delicate result, I can peel the fruit first.
