This pistachio cheesecake is one of those desserts I love making when I want something rich, creamy, and a little more elegant than a classic cheesecake. I combine a buttery speculoos and pistachio crust with a silky filling made from ricotta, cream cheese, heavy cream, and pistachio paste. The result is creamy in the center, lightly nutty, and beautifully balanced by the warm caramelized flavor of the cookie crust.

I especially like serving this cheesecake for holidays, dinner parties, birthdays, or any occasion when I want a dessert I can prepare ahead of time. After a few hours in the refrigerator, the filling becomes wonderfully firm and creamy, making every slice easy to serve.

Pistachio Cheesecake

Ingredients

150 g speculoos cookies

80 g salted butter, melted, plus extra for greasing the pan

50 g coarsely ground pistachios

500 g ricotta cheese

150 ml heavy cream

150 g cream cheese, such as St Môret or Philadelphia

150 g pistachio paste

4 eggs

3 tablespoons all-purpose flour

60 g granulated sugar

A few chopped pistachios, for garnish (optional)

Directions

Prepare the Pan and Oven:

I preheat my oven to 180°C (350°F). I lightly butter a springform pan and line it with parchment paper so I can remove the finished cheesecake more easily.

Make the Speculoos Crust:

I crush the speculoos cookies into fine crumbs, then combine them with the melted salted butter and coarsely ground pistachios. I mix everything thoroughly until the crumbs are evenly moistened.

I transfer the mixture to the prepared pan and press it firmly and evenly across the bottom. I bake the crust for 10 minutes, then remove it from the oven and allow it to cool slightly while I prepare the filling.

Prepare the Pistachio Filling:

I add the ricotta, heavy cream, cream cheese, pistachio paste, eggs, flour, and granulated sugar to a blender or food processor. I blend everything until the filling looks completely smooth and evenly combined.

Assemble the Cheesecake:

I pour the pistachio filling over the slightly cooled crust and gently spread the surface so it is even.

Bake:

I bake the cheesecake for approximately 1 hour. I look for set edges and a center that still has a slight wobble when I gently move the pan. I avoid baking until the center becomes completely firm because the cheesecake continues to set as it cools.

Cool and Chill:

I allow the baked cheesecake to cool completely before transferring it to the refrigerator. I refrigerate it for at least 3 hours so the filling has enough time to become properly chilled and set.

Before serving, I like sprinkling chopped pistachios over the top for extra crunch, color, and pistachio flavor.

Variations

Chocolate Pistachio Cheesecake:

When I want a more indulgent version, I drizzle melted dark or milk chocolate over the chilled cheesecake. I can also add a thin chocolate layer over the crust before pouring in the filling.

Extra Pistachio Cheesecake:

For an even stronger pistachio flavor, I add more chopped pistachios as a topping or scatter some around each slice when serving. I especially like this variation when pistachio is meant to be the star of the dessert.

Different Cookie Crust:

If I don't have speculoos cookies, I replace them with graham crackers or another crisp buttery biscuit. The flavor changes slightly, but I still get a delicious crunchy base.

Citrus Pistachio Cheesecake:

I sometimes add a little finely grated lemon or orange zest to the filling. The citrus aroma brightens the rich dairy filling and pairs particularly well with pistachios.

Decorative Topping:

For special occasions, I decorate the chilled cheesecake with whipped cream, chopped pistachios, fresh raspberries, or strawberries. I keep the decoration relatively simple so the pistachio flavor remains prominent.

Storage/Reheating

I store leftover pistachio cheesecake in an airtight container in the refrigerator, or I cover the cheesecake tightly in its pan. I prefer eating it within about 3 to 4 days for the best texture and freshness.

For longer storage, I can freeze individual slices. I wrap each completely cooled and chilled slice tightly and place it in a freezer-safe container. When I want to serve one, I transfer it to the refrigerator and allow it to thaw gradually.

I don't reheat this cheesecake because I think its creamy texture and pistachio flavor are best when it is served chilled. I usually take it out of the refrigerator shortly before slicing.
